Recipe in English

Ingredients:
Prepare Pakora Mix:
-Baisan (Gram flour) 2 Cups
-Chawal ka atta (Rice flour) 2 tbs
-Zarday ka rang (Orange food color) ¼ tsp
-Ajwain (Carom seeds) ¼ tsp
-Sabut dhania (Coriander seeds) roasted & crushed 1 tbs
-Lal mirch powder (Red chilli powder) 1 tsp or to taste
-Iodized Himalayan pink salt 1 & ½ tsp or to taste
-Zeera (Cumin seeds) roasted & crushed 2 tsp
-Haldi powder (Turmeric powder) 1 tsp
-Lal mirch (Red chilli) crushed 1 tsp
-Baking soda ½ tsp
-Adrak lehsan paste (Ginger garlic paste) 1 & ½ tsp
-Pyaz (Onions) sliced 2 medium
-Hari mirch (Green chillies) chopped 2
-Hara dhania (Fresh coriander) handful
-Water ½ Cup or as required
-Water ¼ cup or as required
-Tamatar (Tomato) sliced 1 large or as required
-Hari mirch (Green chillies) sliced 7-8 or as required
-Chaat masala
-Achar (Pickled)

Direction:
Prepare Pakora Mix:
-In a jar, add gram flour, rice flour, orange food color, carom seeds, coriander, red chilli powder, pink salt, cumin, turmeric powder, red chilli crushed, baking soda, cover & shake well. Set aside.
-In a bowl, add 1 & ½ Cup of pakora mixture, add ginger garlic paste, onions, green chillies, fresh coriander, water (add gradually) & mix well. Onion pakora batter is ready! Let it rest for 5-10 minutes
-In another bowl add ¾ cup of pakora mixture & water then mix well. Aloo pakora mixture is ready! Set aside.
-In a wok, add cooking oil, heat it. (160 C)
-Add onion pakora mixture in half of oil & dip potato slices in pakora batter, add in oil, fry on medium flame for 3-4 minutes & remove them when they are half done.
-Fry them again on high flame until golden brown & crispy.
-In the same cooking oil (180 C), add tomato slices & green chilli slices, fry on high flame for 1 minute.
-In a serving platter, add fried pakoray, fried tomato & green chilli slices, pickle, garnish with cabbage & serve!

  2. I do have so many friends around they are Turkish in USA … I been in their homes , weddings and all festivals but never had seen pakora,s in their cuisine ….???
