  2. I have a couple of questions. I haven't seen hot Dave for quite some time. Is he still around? I could swear I heard a kid in the beginning of this video. Does that happen to be a grand kid?

  3. Oh man….I haven't cut carcass beef in more than 20 years. Young Ethan did a great job!

    Boil the tongue briefly. Skin comes off easily after. Then, put it in the smokehouse, or grill it carne asada style for some killer tacos de lengua.

  4. Next time you get heart, beef, moose, deer, whatever, try stuffing it. Cut the valves etc out from the top, leaving a pocket of heart meat. Stuff it with whatever you like, bacon, onion, garlic etc, then sew it up and into the oven. Makes a nice small roast and sliced thin…very tasty 😊

  5. Hi Rose, when I was a lad ( you know back in about the 1840s ) I remember My mother boiling up an ox tongue but she left the skin on and it peeled off easily after it was cooked, there was a lot of meat on that cut of meat , it had a great taste and was not tough either.

  7. As for the tongue we were introduced to it from some friends and they made it in to corn beef and we have never done it any other way since, we love it. (if you like corn beef)

  8. That was interesting as i had not heard of some off those cuts. Personally, I make as many roasts as I can as I am not a steak fan. But to each their own. If you boil the tongue first, it skins nicely. Good video!

My Colombian mother in law taught me to cook "lengua" the way her grandmother taught her, she uses a crockpot now but back in the day they put the tongue in a Dutch oven with the skin intact scored on the bottom with 1 cup of beef broth and salted generously, let that cook on low all day; pull it and dunk in an ice bath and then pull the skin off, it should peel away nicely; cut into medallions; in a skillet sautΓ© onion, garlic, salt pepper and then add diced tomatoes and let that simmer then add the medallions and simmer for 20-30 minutes plate the medallions and cover with sauce.

  16. Heart recipe- cut heart into .5 inch thick, round slices, coat with flour and fry in bacon grease. When heart is about cooked add a couple of tins of Campbells cream of mushroom soup, simmer till soup is a nice hot gravy. Serve on rice or mashed potatoes.
    Tongue- boil till cooked through, cool and then peel off outer skin. Slice up and eat in a sandwich with mustard, salt and pepper.

  17. When I was a kid. My mom used to get thin sliced tongue, sandwich meat. We used to have it with salads and in sandwiches.

  18. When I was younger we raised and butchered our own beef. My mom would boil the tongue for several hours then grind it for sandwich meats. Mixed with Miracle Whip or Mayo and other fixings it makes a great sandwich.

  19. That is the wrong way to prepare a tongue. Just put the whole thing in a pressure cooker for 45 minutes to 1 hour. Then when you take it out the skin will just peel off and then slice it and make sandwiches with it or just salt it and eat it plain. It will be extremely tender and rich. The tongue is one of my absolute favorite parts. 😊
