Along Xochimilco’s canals farmers like Sonia Tapia are keeping ancient practices alive in the chinampas, and we meet conservationists Francisco Salvador and Omar Espinoza who are protecting one of Mexico’s most beloved and symbolic creatures, the axolotl. Chef Raul Jimenez makes his mother’s Pipián Verde and Franciso’s wife Aidee makes chiles rellenos two ways – one familiar and one a surprise! In my kitchen, I recreate Chef Raul’s Pipián Verde and we make Ancho Chiles Rellenos.
