In this video we visit a legendary 50-year-old Iranian restaurant that’s become a true local institution, famous for its slow-cooked, fall-off-the-bone lamb necks, juicy marinated chicken thighs, and all sorts of classic kebabs served with perfectly steamed Persian rice and rich loobia polo (green bean rice with meat).
The camera follows the entire process from start to finish, from breaking down and seasoning the meat to charcoal grilling over open flames, layering and steaming the rice, and plating up generous portions during a non-stop rush in a tiny kitchen that has barely changed in decades, all inside a dining room that’s absolutely packed with loyal regulars and hungry newcomers watching plate after plate of old-school Persian comfort food fly out of the kitchen.

    دست بدون دست کش مرغ بدون دستکش . قابل اعتماد نیست پارچه نمک کشید به زمین بعد گزاشتن تو اب برنج .

    I think these ppl don’t know what sanitation means. Touching foods and ingredients with no gloves. Especially Raw Chicken and Meats, cross contaminating everything.

    MUTFAK TEMİZ DEĞİL. Güvenli gıda hazırlama kurallarına uyulmamış. Temizlik imandan gelir. Gıda ve gıda ile temas eden kutular yere konmaz, yemek hazırlayan kişinin üstü temiz olmalı. Tabaklar sofraya süslü geliyor ama mutfak masıl o çok önemli

    کثیف و غیر بهداشتی، پروانه این محل باید ضبط و مالک به جزای نقدی محکوم و از فعالیت تا اطلاع ثانوی منع سود. سریعا گزارش کنید به اداره بهداشت.
