Nacho Spaghetti- A New Twist on a Favorite Meal! – Sunday Subscriber Recipe #109

Nacho Spaghetti

1 – 1 1/2 pounds ground beef
1 small to medium onion, diced
1 jalapeno, diced
1 packet taco seasoning
1 can Campbell’s Fiesta Nacho Cheese Soup
1 soup can of heavy whipping cream
1 can original Rotel
2 cups shredded Fiesta Blend Cheese, divided
3/4 of a 16 ounce box thin spaghetti, cooked
2 Tablespoons chopped chives

Brown the ground beef, onion, and jalapeño in a skillet. Drain the grease.

Cook the spaghetti following the directions on the box.

While the spaghetti is cooking, add 1/3 cup of water and the taco seasoning to the ground beef. Cook and stir for five minutes.

Add the fiesta nacho soup, the Rotel, the heavy whipping cream, and one cup of the fiesta blend shredded cheese. Stir and cook these together over low heat for five minutes.

Add the cooked spaghetti and mix well.

Turn the heat off and sprinkle the top with another cup of the fiesta shredded cheese and the chopped chives. Cover for five minutes to allow the cheese to melt and then serve.

Our family is all about Nacho Fiesta Cheese Soup, but I am not so sure we couldn't just use the Tostitos brand of Mexican dip … it has one that looks like cheddar cheese (I am wondering that nacho cheese isn't a process that makes a difference between the Fiesta Soup and the cheddar cheese soup – – just an assumption on my part) … I have seen gallon cans of nacho cheddar cheese for the cheesy nachos in the restaurant venue ….

    Is this dish very spicy?

    – There was a substitute teacher I 'loved' and whenever I saw her in public I ALWAYS greeted her. I've also greeted other teachers I had when I saw them in public. I'll admit there were teachers I had that I didn't like and if I saw them in public I kinda tried to avoid them seeing me. Somehow I know I would've loved having both of you as teachers.

  7. I make almost the same recipe! I just use 1 cup half and half instead of a soup can of heavy cream, and I use the cheddar soup. The sauce is delicious with long pasta or any kind of short pasta. It's also delicious poured over tortilla chips for "beefy nachos". I have also used a can of Rico's Gourmet Nacho Sauce when I didn't have the soup.

  8. I, too, had a difficult time finding Fiesta Nacho Soup. BUT, I eventually ordered the soup from Amazon. It is still available, I just checked to be sure.

  10. Yummmmy! I have a recipe for Mexican spaghetti that I think would REALLY taste great after a little tweaking. This recipe looks SO good it's got my mouth watering.

  11. When I was a teenager, I had a friend whose family was from Chile. They made a pasta dish with sliced steak and a delicious cheese sauce. Ever since then, I've been trying to find a similar recipe and this may just be it! I don't eat beef anymore, but I can use chicken for sure. Thank you!
