Prep time: 15 mins | Bake time: 30–35 mins | Yields: Two 8-inch or 9-inch round cakes
    Ingredients
Dry: 3 cups all-purpose flour, 1 tbsp baking powder, and ½ tsp salt.
Fats: ½ cup unsalted butter (softened) and ½ cup vegetable oil.
Sweetener: 1 ½ cups granulated sugar.
Liquids: 1 ¼ cups buttermilk (room temperature), 4 large eggs, and 1 tbsp pure vanilla extract.
    Instructions
Prep: Preheat oven to 350°F (175°C). Grease two cake pans and line the bottoms with parchment paper to prevent sticking.
Cream Butter & Sugar: In a large bowl, beat the softened butter, oil, and sugar together until very light and fluffy (about 3–5 minutes).
Add Eggs: Add eggs one at a time, beating well after each addition, then stir in the vanilla.
Alternate Dry & Wet: In a separate bowl, whisk the flour, baking powder, and salt. With the mixer on low, add 1/3 of the flour mixture, then half the buttermilk. Repeat, ending with the flour. Do not overmix; stop as soon as it's combined.
Bake: Divide batter evenly between pans. Bake for 30–35 minutes. A toothpick inserted into the center should come out with just a few moist crumbs.
Cool: Let cakes cool in the pans for 10 minutes before inverting them onto a wire rack to cool completely
