Blueberry Sausage Breakfast Cake

1/2 cup butter, softened
3/4 cup sugar
1/4 cup packed brown sugar
2 large eggs, room temperature
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1 cup sour cream
1 pound pork sausage, cooked and drained
1 cup fresh or frozen blueberries
1/2 cup chopped pecans

BLUEBERRY SAUCE
1/2 cup sugar
2 Tablespoons cornstarch
1/2 cup water
2 cups fresh or frozen blueberries

Preheat oven to 350°.

Cook the sausage and drain well.

In a bowl, cream the butter and the two sugars. Add the eggs, one at a time, beating well after each addition.

Combine the flour, baking powder, and baking soda. Add that mixture alternately with the sour cream to the butter/sugar mixture. Beat well after each addition of ingredients.

Fold in the sausage and the blueberries.

Pour into a prepared 9” x 13” baking pan. Sprinkle with pecans. Bake 35 to 40 minutes or until the cake tests done.

Make the sauce by whisking together the sugar and cornstarch in a sauce pan. Stir in the water until the sugar and cornstarch begin to dissolve. Add the blueberries. Cook and stir until it is thick and bubbly. Spoon over individual servings of the cake.

Refrigerate any leftover cake and sauce.

  2. I think I would prefer to make the blueberry cake and serve the sausage (as patties) on the side! Yes, I was one of those weird kids who hated for foods to be mixed or even touch each other on the plate lol!

  3. Could i use blueberry pie filling on top instead of the glaze. Looks delicious. I have to wait until they restock the blueberries our stores are completely out.

    I'd have to omit the nuts. I also don't like the consistency of blueberries.
