Mexico is not just tacos.
It’s history, culture, and bold flavors in every bite.

On my first trip to Tijuana, I discovered something shocking — the original Caesar salad was NOT created in Italy.

It was born in 1924 at Caesars Restaurant by Caesar Cardini, an Italian chef who immigrated to Mexico. Watching it prepared tableside — with romaine lettuce, anchovy, egg yolk, mustard, lemon and dramatic flair — was like witnessing culinary history.

But that was just the beginning.

We explored legendary seafood tacos at Mariscos Walter — tuna wing tacos, octopus, marlin, smoked fish quesadillas, and even cahuamanta (stingray taco). Bold, spicy, unforgettable.

Then we dove into true Mexican street taco culture:
