Ingredients:
Prepare Chicken Skewers
-Boneless chicken 250g
-Dahi (Yogurt) 1 & ½ tbs
-Tomato paste ½ tbs
-Lehsan paste (Garlic paste) ½ tsp
-Dried Oregano ½ tsp
-Lal mirch powder (Red chilli powder) ½ tsp or to taste
-Zeera (Cumin seeds) roasted & crushed ½ tsp
-Haldi powder (Turmeric powder) ⅛ tsp
-Iodized Himalayan pink salt ½ tsp or to taste
-Olive oil 2 tsp
-Fresh parsley (chopped) 2 tbs
-Olive Oil
Prepare Fattoush Salad
-Sumac powder ½ tbs
-Iodized Himalayan pink salt ½ tsp or to taste
-Kali mirch (Black pepper) crushed ½ tsp
-Olive oil (Extra virgin) 3 tbs
-Lemon juice 3 tbs
-Water 2 tbs
-Lehsan (Garlic) 1 tsp
-Iceberg (Shredded) 1 & ½ Cup
-Cherry tomatoes (Halved) 1 Cup
-Mooli (Radish) sliced 1 Cup
-Kheera (Cucumber) 1 Cup
-Pyaz (Onion) diced 1 Cup
-Red bell pepper (Diced) 1 Cup
-Fresh parsley (Chopped) handful
-Podina (Mint leaves) chopped handful
Assembling:
-Toasted pita bread
-Fresh parsley (Chopped) as required

Direction:
Prepare Chicken Skewers
-In a bowl, add chicken, yogurt, tomato paste, garlic paste, red chilli powder, cumin, turmeric powder, pink salt, olive oil, fresh parsley, mix well, cover & marinate for 15-20 minutes.
-Skew marinated chicken in a wooden skewer. (Make 3 skewer, 5 pieces in 1 skewer)
-Heat a greased grill pan, add chicken skewers, cook on low flame for 4 minutes each sides, take out & set aside.
Prepare Fattoush Salad
-In a mixing jar, add sumac powder, pink salt, black pepper crushed, extra virgin olive oil, lemon juice, water, garlic, mix well, salad dressing is ready, set aside.
-In a bowl, add ice-berg, cherry tomatoes, radish, cucumber, onion, red bell pepper, fresh parsley, mint, prepared salad dressing, mix well.
Assembling:
-In a serving dish, add prepared salad, grilled chicken skewers, toasted pita bread, garnish with fresh parsley & serve!
