  7. Eva from Pasta Grammar puts enough salt in her pasta water to simulate sea/ocean water. That's a lot more salt than I have ever seen anyone put in their pasta or potato water. I tried the amount she uses and realized the salt amount is puny compared her usual amount of salt.

    Apparently, dried pasta is made to have salted water used to hydrate it to al dente. Companies tried to add the salt to the pasta itself, but it was too much salt, since most of the salt in the water is thrown out in the end. But that's why they use the pasta water to thicken things, they use the starch from the pasta itself and the salt from the salted water.

    I've learned so much about the origins of food, a lot of our food and civilization originates from Africa, but food especially cooking techniques and food itself migrated with people to Italy from Asia/China and Africa. My specialty is geography, I joke that geography is the migration of people/things through time and space. In other words, geography is study of the TARDIS of humanity.
