Who doesn’t love a dump & bake recipe? Rory sure does, because it means dinner is ready on the table quick! This one is one for the whole family! Lentils are the perfect protein here, small, and mighty! Orzo is the perfect toddler pasta shape, no cutting required!

The full recipe is below!

Lemony Lentil Orzo:
Ingredients:
2 tbsp olive oil
2 garlic cloves, minced
1/2 red onion, diced
1/2 cup cherry tomatoes
1 cup orzo
1 can lentils, drained and rinsed
1/4 cup vegan cream cheese, I used @nutsforcheese
1 cup unsweetened soy milk
1 cup veg stock
1 tsp salt

1/2 bunch fresh dill, minced
1/4 cup chives, finely diced
1 lemon, juice and zested
Vegan Parm for garnish

Method:
1. Preheat your oven to 400F. In a oven safe baking dish, add everything except the herbs, lemon and parm. Mix to combine. Cover and bake for 20-30 minutes, stirring often to prevent sticking.
2. Remove and mix in the fresh dill, lemon juice, zest and vegan parm. Serve up and top with more parm and chives.
