    Ingredients
    • 1 cup flattened rice (poha)
    • 2 tbsp oil
    • 1/2 tsp mustard seeds
    • 1/2 tsp cumin seeds
    • 5 to 7 curry leaves
    • 1/4 tsp turmeric powder
    • 1-2 green chilies, chopped
    • 1/4 cup onion, finely chopped
    • 1/4 cup tomatoes, chopped
    • 1/4 cup potato,(boiled)
    • 1/4 cup peas (boiled)
    • 1/4 cup carrot, chopped
    • 1/4 cup capsicum, chopped
    • 1/4 cup sweetcorn, (boiled)
    • Salt to taste
    • 1 tsp sugar
    • Fresh coriander leaves, chopped
    • 1-2 tbsp lemon juice
    • A handful of roasted peanuts

    How to prepare>>>
    .
    Wash the poha under running water. Gently fluff it up with your hands and set it aside. Let it sit for a couple of minutes to soften.
    .
    Heat oil in a large pan or wok over medium heat. Add mustard seeds and let them splutter. Then, add cumin seeds (if using), curry leaves, chopped or sliced green chilies, carrot and capsicum. Sauté until the vegetables become soft and translucent.
    Now add the onions and Saute until golden brown, now add the tomatoes and saute them properly.

    Add the diced potatoes and peas and cook for 4-5 minutes.
    .
    Now add the spices first add the turmeric powder, red chilli powder, coriander powder, salt as per taste.
    .
    Once the vegetables are cooked, add the sweetcorn and mixx them properly with vegetables.
    .
    Now add the rinsed poha to the pan. Gently toss everything together, making sure the poha is well coated with the spices.
    .
    Add lemon juice, roasted peanuts, and chopped coriander leaves. Give it one last gentle mix.
    .
    Now sprinkle some chopped onions and some Aaloo bhujiya namkeen for enhancing the taste.
