Wanted to clarify! My note about him drawing inspiration from Al Pastor was purely regarding the pineapple + shawarma set-up. It’s definitely different as he’s using chicken with different spices rather than pork!

Pork doesnt work in muslim new york, so he made the correct choice really. That said, crispy pork belly with that pineapple in that crispy bread 🤤🤤🤤🤤🤤 id be in heaven. Chicken works and its good. But well made crispy pork is sensational.

Man’s a genius. THAT is truly executed fusion cuisine. I’m definitely going should I ever be in nyc.
