Lemonade Cake – A Delicious Cake to Welcome Spring!
Lemonade Cake
1 box Lemon Supreme Cake Mix
4 ounce box Jell-O Lemon Instant Pudding Mix
4 eggs
1 cup water
1/2 cup oil
Preheat oven to 350°. Grease a 9“ x 13“ cake pan and set aside. Prepare cake strips and place around outside edges of pan, if using.
Stir together the cake mix and pudding mix. Add the eggs, water, and oil. Mix well until completely combined. Pour into the prepared cake pan and bake 45 to 55 minutes or just until the center of the cake tests done. Top with the glaze below.
GLAZE:
1/2 cup Country Time Lemonade mix
1/2 cup water
2 Tablespoons butter, melted
2 cups confectioners’ sugar
Mix well the four ingredients for the glaze. Drizzle over the warm cake a little at a time, allowing the glaze to soak in. Cool completely.

I also love anything lemon. As I watched Tom make this, I thought of my favorite doughnut from a local bakery. I may try this cake topped with a cooked white (ermine) icing then sprinkled with a little coconut…yumm!

I have found that substituting milk instead of water and melted butter instead of oil for any box cake mix really levels up the end product. I can't wait to make this cake for my friends!
