  4. I worked at an Irish restaurant and ran Sloppy Joe’s as a special but called them The Unkempt Joseph 😂 we sold out

    Said the ground beef was 80% lean and 80% fat
    Tomato paste doesn't oxidize because "like toothpaste, you're putting the tube back on"

    Only point these things out because it made me chuckle and because I found it a bit charming that these things can pass Alton's scrutiny. I imagine him seeing this, watching it back, and having a good laugh about it. Love this Good Eats-esque format.

  6. Holdup, I’m confused. Around the 14 minute mark, Alton claims to want to use 80/20 ground beef to activate all of the spices, saying many of them are fat soluble. If they are, doesn’t draining away the fat take away at least some of the spices (likely a significant enough portion) since we’ve made a fat solution out of the beef fat and spices? If we are, has that already been compensated for in the original spice mixture?

  7. One of my pet peeves is when people measure ingredients out into a separate little bowl and then dump it into a large bowl.
    Like why are you making extra bowls dirty? Just add your oil/salt/pepper/etc. directly into your large bowl.

  8. I'm with Alton's mother, Sloppy Joe's are vile for living up to their name haha. I hated them as a kid. Like, I would eat a lot of food you shouldn't with my fingers but there was something about Sloppy Joe's that I loathed. It was probably the tomato.
