Recipe of Dahi Baigan :

1. Take fresh brinjal and wash. Cut into round or long shapes.
2. Marinate with salt, turmeric powder, Kashmiri mirch powder and keep for 10 mins. Heat a pan and shallow fry the brinjal from both sides.
3. Now in the same oil put some cumin seeds, black mustard seeds, Curry leaves, dry red chilli, Chopped Garlic , Chopped Green Chilli and chopped onion. Saute for a while until onion is tender.
4. Whisk some curd. Add it on the Tadka and then Add fried brinjals. Put some fresh coriander and gently mix .
5. Serve with rice or paratha.
