I lived in the Philippines for like a year and a half, I was very young at the time. Even though I lived there, I'm still not familiar with their food either. I'm getting better at knowing the dishes. Unlike other Asian foods, Filipino foods are still not as well known by other people. I typically go eat at one or two Filipino places when I'm in Vegas or San Diego. There aren't that many Filipino restaurants here in the Midwest.

Mexico and the Philippines has a shared history. The Philippines was governed from Mexico City at one point. Manila BBQ one of the better Filipino restaurants in Vegas. They take good care in preparation and presentation.
Filipino food is fire.. I ainโt even Filipino.. I found out about dinuguan when I went to a party and they said itโs chocolate soup.. Does that youโre trying different cuisines

Iโm so glad you finally featured and tried lots of our Filipino dishes and Iโm so proud of you trying Dinuguan (Pork Blood Stew) my husband is white and when I had him tried it, he liked it right at the first bite, but when he asked me why is it they dark color?, I told him its a pork blood stew. Oh Boy since then he never wanna do anything about it anymore LMAO ๐
The Milkfish you tried is a National Fish of the Philippines and the dish you had is Called Bangus Steak, its named after the original dish Beef Steak which is my favorite. The dish is simply cooked with Soy Sauce, Calamansi and Onions cut in rings. Next time try the Beef Steak Version or a Pork Chop Version when you see them.
The other recipe that she showed you but you didnโt get to try is the Kare Kare. It is a Peanut base so the sauce taste like peanut bitter and the shrimp paste is what will give and complete the sa Cory taste of it. Its made out of Beef Tripes and Beef meat or some people prefer to use the OX Tail. Me I prefer the beef and tripes and thatโs how I cook my Kare Kare Everything time. Pancit is a Rice noodle the this stirred fry with veggies.
Pinakbet or Pakbet is a mixture of stir Fried veggies seasoned with shrimp paste called Bago-ong some add shrimp and pork in it or just pork. Vegans will just simplify it with no meat.
Tinola is a Chicken soup cooked with onions, garlic, ginger root, blk pepper, salt and fish sauce. Its one of our comfort Food specially when you catch a cold or the weather is cold too. Its very savory ๐ฅฐ
How I wish we get to see you in person one of these days ๐ฅฐ We got luck to meet Explore Vegas in that Buffet too ๐ฅฐ We also got lucky to meet Tanya and Dave of Turn it up World at Anthonyโs Prime Steak.
There is another good Filipino Buffet in Maryland its name is Kusina ni Lorraine. Tim Lee have went there several times he loves their Food there too. My husband and I often goes there too. Hopefully someday we get lucky to see you, Norma, Lydia, Jay and Dan and also Matthew. We are also hoping to meet Shin, Tim Lee, Mike Chen and Dan the Medic.

Aloha Jorge! Hawaiian here learning for the first time that there is a Filipino dish like the Hawaiian stewed luau! The taro leaves with coconut milk. Iโve never tried their version. Danny the Medic, Nurse Marion and Tim Lee have all been there. Mahalo for this culinary journey!
