Sheet Tray Nachos – We had them in Cincinnati and had to recreate them at home! They’re so good!
Sheet Tray Nachos
The following ingredients are layered on a 9”x13” sheet tray. Use as much or as little of each ingredient as you like.
Tortilla chips, spread across the bottom of the tray
lettuce, cut until small pieces
pulled pork, heated
black-eyed peas, heated
cherry tomatoes, halved
corn, heated
diced jalapeño peppers, drained
sliced green onions or scallions
white Queso cheese, heated and drizzled on top
BBQ sauce, heated and drizzled on top
Ranch dressing, drizzled on top
Sour Cream, optional, dolloped on top

I believe that green onions and scallions are the same thing. One is only harvested earlier.

Next time you go to Cincinnati get a case of Dixie Chili. It's the best canned chili ever and whenever I hear about someone I know that's going, I always try and convince then to bring me a case back! Also, tomatoes are a must!

We went to Gulf Shores for 2 weeks last year around Thanksgiving( our first time there) to spend time with our youngest daughter and her family-on Sunday after church we went to eat at a place that had a huge sheetpan of nachos like thi s for the 6 of us- oh my- it was so full- about 3 kinds of meat- lettuce-tomato -onions-2 kinda of olives-peppers-shredded cheese and quesosour cream on the side and dressings on the side -sooo good

To make it a truly individual dish, put everything in individual bowls. Other things to add are shredded cheese, avocado, salsa, and olives. 😀😀

There’s an Eagle Restaurant across the street from us in Indy. We always walk to some restaurant further up the street. We definite need to try the Eagle. They have a large outdoor patio that’s attractive.
These nachos looked really great!! I would use refried beans though (I like the peas you used, but not on nachos) and some drained black olives too.❤❤❤😊😊😊

I thought these were going to end up in the oven. Intriguing to say the least.
I'm from the north, never had a black eyed pea in my life. I'm only really into BBQ sauce when grilled and layered time after time on every turn on certain meats, generally pork. I don't like it a whole lot if just dumped on meat, etc. but this was drizzled so maybe…
But nachos. I was never one that really did such or would order such. Chips and dips of various kinds, cheese, refried beans, etc. or a Velveeta salsa or just salsa sitting on the counter before a meal at a holiday gathering, sure.
But one time years ago, my daughter and I were out for Bingo I believe at a local bar walking distance from my place and the guy next to us ordered nachos and like you, we saw those things and it was like WOWZA. We had eaten several things there but never those and had never seen them up close either. They were taco burger nachos but this huge hill on this platter, way more than you had on this sheet pan even. He dived in and ate a ton of them and was stuffed. He offered us the rest. We took them. We had talked to him a bit and probably trying to hide our interest in his order. Lol.
I don't even recall all they had on them but one could just tell by sight they were great. I believe ground beef taco mixture, black olives, green onions, tomatoes, cheese (not cheese sauce or warmed up queso either), I think corn and either black beans or pinto beans, I really can't recall it all but they were WOW. We ate his leftovers after being polite and saying he should get a box and take them home and he said no, so we then took them.
Next time in there we ordered them. They could have fed a family I swear.
I'm not a big fan of cheese sauce or queso other than limited. And personally I think oven baked adds to them. Good chips are good chips but the oven browns and crisps them even more, heats the veggies on such, melts the shredded cheese, goos it all together so all sticks together a bit…
Think about taking what you made and putting such in the oven… Of course you don't need to warm the beans and corn etc. then either separately.
I forget what he had for adds but I know when we ordered them we could get sauces, sour cream, lettuce, etc. to add onto that pile or ever bite.
They look awesome but I bet they'd be even better baked with real cheese, etc.

I believe green onions and scallions are pretty much the same. I once was looking for spring onions and never found them. I learned spring onions are called green onions. Needless to say I didn't fix the recipe that called for spring onions. 😅

I love Baby Ray’s BBQ sauce also! I usually get the brown sugar variety then add 2-3 tablespoons of apple cider vinegar and 1+ tablespoon of hot sauce right into the Baby Rays bottle and shake it up. It’s absolutely delicious! (You have to squeeze a bit out first to make room, then add some of the add-ins to that as well). It’s soooo good!

Another winner….because l'm old and no teeth l'm gonna use cheese sauce and pour it all over the chipps,meat and tomatoes and put it in the oven to make the chips soft from the cheese sauce then top it with the rest of the toppings….thanks for a great idea….❤

If I was making these, I would not use pulled pork (I was food poisoned by a bad pork chop dinner when I was in College). I would use Pulled Chicken or Ground Beef instead. I would pile on the chopped tomatoes and maybe some chopped pepperoni instead of the corn (I don't eat Sweet Corn more than once or twice a year).
Otherwise, I am all in on this snack !!
Those "BUCKEYES" can come up with some good recipes can't they. My family had their first TACO's in Circleville back in the 70's. We still enjoy eating Mexican/Indian foods but not much on Jalapeno's.Love the flavor but not the heat. Thanks for sharing this recipe with us Tom and Melissa. Stay safe and keep up the great videos.
