Cowboy Cornbread Chicken | Food Wishes

This cowboy cornbread chicken is not chicken served with cornbread, but chicken served in cornbread, and not just any cornbread. This features a cornbread spiced-up Southwest-style, just like the cowboys made it…allegedly. And, since everybody knows cowboys don’t like to wash dishes, it’s a one-pot meal. I served it with a chipotle spiked hot honey butter. Enjoy!

  1. Anybody have any suggestions for this that is meat free? Would tofu work for this? Or a specific meat substitute?

  2. I would cut the chicken into smaller chunks, instead of big pieces like that. Also, probably cook them a bit before adding them to the cornbread batter.

  3. I swear, the US Poultry Farming industry won't be satisfied until you can ride your chicken home from the store with how big the cuts are getting.

  5. Substitution questions:
    1) Instead of making the cornbread batter from scratch, would using a store-bought white cornbread mix work, too?
    2) Since this is a spicy dish, do you think a substitution of hot honey in the batter would work?
