The food at the end of the fine dining is called petit fours not amuse bouche. 🙂 Amuse bouche is for the start of the meal.
Not all Americans rave about his fish and chips. I'm in New England (upper north east US) and have never seen it here. Our region loves seafood inc fish and chips and anyone who did it on a subpar level would go out of business quickly here.
