We’re taking on recipes from Nick DiGiovanni, Andy Cooks, and Fallow, following each one step-by-step, no shortcuts, no tweaks, and then tasting them side by side to crown a winner.
From saffron-infused basmati rice and crispy fried onions to yogurt-marinated chicken and slow-braised beef curry, each of these biryani recipes brings something completely different to the table. Some stay traditional, some get creative… and one of them completely surprised me.
And of course, we finish things off the only way we know how 👉 combining all three into the ultimate Franken-biryani.

I use Sonny's recipe from That Dude Can Cook. It's fantastic. He uses turmeric instead of saffron. I've tried it both ways and I prefer the turmeric.

truthfully i never got the whole Nick giovanni thing. he always came off too "fake" or "hollywood" for me. insincere and staged. i usually prefer Guga and other chef's who kind of handle themselves similarly. yeah he does com's but the way he comes across with his love of meat and such it just feels more authentic. whereas nick just seems….like he is waiting for me to fork over a huge check.
Biryani is kind of mid. I prefer other Indian dishes wayyy more

Yeah the Fallow one does feel like the kind of thing we get more often in UK Indian restaurants, executed at a very high level. But you should have included an Indian (or Pakistani, or Bangladeshi) chef!

Chat upset there's no Indian chefs. And forgetting there's an infamous dispute over who makes the better biryani: India or Pakistan. Both would need to be represented. But random commenters gonna hate.

There's plenty of beef/buffalo eaten in many, many parts of India (problematically for the section of privileged-caste Hindu society that tries to set the narrative about us for ourselves and the rest of the world, often in very violent ways). And there's many different kinds of biryani made all over the country. And basmati isn't a must. Some of the best biryanis aren't made with basmati at all, but other kinds of rice including the incredible seeraga samba (it's called that in Tamil Nadu, and other names in other places). I wish I had the confidence of an American dudebro chef to be able to put out inaccurate generalisations about other cultures in a video where I make a dish based on recipes by three people also not from that culture. It's hilariously stupid.
How do you feel about mint? I'm pretty nah not really about it. Probably goes well with some things besides mojitos but haven't found a use for it otherwise
I really think you made a bit of a mistake here, no Indian chef's at all! YouTube has thousands of highly popular either Indian or Indian sub continent or even British or US Indian heritage chefs, such as Varun Inamdar, Latifs Inspired, or Chintan Kiran Pandya. It's like doing Mexican food by all American chefs, without input from Jonathan Zaragoza!
Adam, thank you for the time, effort and expense that you devoted to this recipe. I’ve made saag paneer a few times using a famous YouTube recipe and I know from first hand experience that this was a marathon. I think Indian food is in the number two spot right behind Chinese food on the list of most difficult to make food. Also, cooking meat with the bone in doesn’t add flavor. That’s total BS and I’ll for on that hill. It’s a myth. Prove me wrong!

In the UK the Biryani is always served with a vegetable curry sauce, as the Biryani itself is quite dry, and although chicken is the most popular, we usually can get mutton (My favourite), prawn, goat or beef versions depending on the chefs heritage. Due to our long lasting link with the sub continent, Indian/Pakistani/Bangladeshi foods are very popular, in fact our most popular take out food is based on that the Chicken Tikka.
Probably in a similar way the US has a big food link with Mexican food.

Nice video Adam. I've gone down this rabbit hole as well. fun stuff and delicious. Some other favorites also include: Dishoom, Chintan Kiran Pandya. I'm glad you noted the addition of Raitta. I think the game changer in Biryani, is in the condiments. The more the better, and an explosion of taste. Some popular options: dried plums, pomegranate, and of course mint/coriander chutney, and tamarind chutney.
I can't imagine how much you paid for that saffron. Talk about a lifetime supply!

I love these comparisons. My only quibble is that the Fallow version should have had fresh coriander/cilantro and I would also add mint. Looking forward to your next one!!
