For Samosa Dough
250 grams all-purpose flour
¼ cup melted ghee
6 tablespoons water
¾ teaspoon carom seeds
¾ teaspoon salt

For potato filling
500 grams potatoes
½ cup green peas
1 tablespoon ghee
2 green chilies chopped
1 pinch hing (asafoetida)
4 tablespoons coriander leaves chopped finely
1 teaspoon lemon juice
½ teaspoon salt (adjust to taste)

Spices
¾ teaspoon cumin seeds
¾ to 1 teaspoon garam masala
¾ teaspoon red chilli powder (adjust to taste)
½ teaspoon cumin powder

Mint Chutney

1 cup mint leaves
½ cup coriander leaves
½ teaspoon sugar
½ teaspoon salt (adjust to taste)
¼ inch ginger (peeled)
1 small garlic clove
1 green chilie
1 cup yogurt

  1. Not just because meat was expensive. Also, many many many households were vegetarians (milk and milk products and anything grown on the plant vegetarians) and considered eating meat as selfish and cruel. A lot of them follow the same principles even today.

  4. you have to understand that nothing "indian" actually belongs to them alone. bangladesh, pakistan, nepal all have the same cultural root. so calling samosa indian is wrong. it belongs to the whole south asia. now some indians wont agree, and thats ok. a dog barking doesnt change the fact by any means. but you should know this
