  3. I cook chicken covered in mayo all the time and it tastes great. No fishy taste whatsoever. You must have used some bad mayo or something.

  4. I have been learning lately that some BAKING SODA should go in that brine water for extra tender and flavorful meat.

  5. Good chicken recipe: blend 2 sticks of melted butter, 3 tbsp garlic, 1 lemon juiced, 1 tsp red pepper, 1 tsp kosher salt, and 1 tsp black pepper "optional: 1tsp of good quality liquid smoke". spatchkock your chicken and inject half of the mix into the chicken. Place the leftover mix into the fridge until it thickens back up and rub it onto the chicken and under the skin of the breast. Bake or smoke at 375f until internal temp reaches 165f. I prefer cooking it in my Dutch oven at 400f.

  6. Just solidifies my belief that if youre cooking a whole chicken, theres no reason to not spatchcock it. Also smoked chicken skin just isnt going to happen lol maybe if you cranks the heat way up towards the end but even then idk. Creating a full on bark like that is probably the best bet lol

  9. Extreme? LOL. Now go wrap a chicken in foil, put it under the hood of your car near the exhaust manifold, and go on a nice long road trip. NOW you have extreme. 🤣

  10. I really enjoy the white sauce from North Alabama. When I prepare it at my place, I substitute pickle juice for regular vinegar – it brings a fantastic layer to the taste!

  12. I just love when Guga tries to justify the "No… Leo, you don't eat the 30 pounds of butter, you eat the chicken that was cooked in it" as if the chicken didn't absorb anything at all.
