Corn and Tomato Chowder

9 slices bacon, cut into small pieces
1/2 cup finely chopped onion
1 teaspoon minced garlic
2 medium-sized russet potatoes (3 cups), peeled and diced
1 1/2 teaspoons salt (or to taste)
1/4 teaspoon pepper
1 bay leaf
3 cups water
1 can (10.75 ounces) tomato soup
1 can (14.75 ounces) creamed corn
pinch of sugar, optional
pinch of red pepper flakes, optional

Sauté the bacon until done, then, using a slotted spoon, remove to a paper towel lined plate. Set aside.

Leave enough grease, about 2 Tablespoons, to sauté the onions until they are soft. This will take 4 – 5 minutes. Add garlic and cook one more minute.

Add potatoes, salt, pepper, and cover with water. Cover the pot and simmer until the potatoes are soft; about 15 to 20 minutes.

Add the creamed corn, tomato soup, and bacon. Cook on low just until heated through. Add the sugar and red pepper flakes, if desired. Remove the bay leaf before serving.

Makes 4 – 6 servings.

  6. Tom you sound like you and l was raised with same childhood principals. My parents always said…. Waste not, want not". I think l will serve this with broccoli cornbread!
