Three simple salads that are so quick, so easy, and so versatile — you’ll be reaching for these all summer long. Whether you need a fast lunch, something to take to a potluck, or just a fresh side to round out supper, these three have you covered. We’re making a sweet old-fashioned grape salad with a brown sugar pecan topping, a no-fuss chicken salad that comes together in about three minutes, and a classic tomato and cucumber salad bursting with bright summer flavor.
The best part? Each one uses simple ingredients you probably already have on hand, and they all keep beautifully in the fridge.

🛒 Ingredients
Old-Fashioned Grape Salad
9–10 cups red and green seedless grapes (mixed)
1 cup sour cream
8 oz cream cheese, softened
1/4 cup granulated sugar
1 tsp vanilla
3/4 cup brown sugar (for topping)
1 cup chopped pecans, toasted (for topping)
Simple Chicken Salad
2 cans (12.5 oz each) chicken breast, drained
1/2 cup mayonnaise
1 Tbsp everything bagel seasoning (start with 1, add more to taste)
Tomato & Cucumber Salad
1 English cucumber, sliced into bite-sized pieces
2 large tomatoes (or 1 1/2 cups grape tomatoes, quartered)
1/2 medium red onion, thinly sliced
1 Tbsp fresh dill (or basil or oregano), chopped
2 Tbsp olive oil
1 Tbsp red wine vinegar
Salt and pepper, to taste

I cut my California cucumbers the same exact way. I usually cut my grape tomatoes in half but I like the idea of quartering those too. Will definitely make this salad, adding the red onion slices and dill. Easy and delicious. Thanks for more excellent salad ideas!

I love all three of these salads. The first time I ever tried grape salad was at Chicken Salad Chick and I was in love and can never get enough of it. Mary Katherine, your Chicken Salad story is definitely relatable. I've thought about a specific leftover all day long, gotten home to find it was nothing more than a mere memory, lol! All of your salads look great. I make Tomatoes, Cucumbers and Onions quite a bit, I love those combinations together. I generally use an Italian Dressing, or a Balsamic Dressing because of the convenience of them in the refrigerator.

The grape salad looks tasty. My grandmother used to make something similar, just grapes, sour cream, and brown sugar. I’ve made it several times, yummy!
These look delicious. I do not like English cucumbers so I'd make this in the summer when I could use pickling cucumbers and fresh tomatoes. I'd also use sweet Vidalia onion! If you've never made a tomato salad, aka cracker salad, please try it!
