I celebrated my birthday with my parents at CUE and it honestly reminded me why this is my favorite Michelin star experience in Amsterdam right now. The entire menu revolves around wood fire cooking, fermentation, smoke, and beautifully simple ingredients that somehow turn into some of the most complex flavors I’ve had in Amsterdam.
From the sea bass with bergamot to the langoustine add-on, ex dairy cow with brown butter, and the natural wine pairing, every course felt thoughtful without trying too hard. The downstairs listening bar with vinyl and cocktails makes the whole night feel more like an experience than just dinner.
