    I was just at House of Joy on April 30th. It was so good! Agree Har Gow and Sui Mai were delicious!

  17. The chewiness of the har gao wrapper is due to the mix of flours used, a blend of wheat starch and tapioca starch. The tapioca starch gives the wrapper a sticky, bouncy, chewy texture. This is the preferred, new style of wrapper for har gao in Asia now. The old style uses wheat starch and corn starch, making the wrapper more soft and tender, breaking easily. I've made har gao both ways and I prefer the chew.
