Very Authentic place. Very noise. Lots of people talking loudly. Lots of clanking of dishes. Just loud and noisy. I didn't hear any screaming kids though. Thanks for sharing.

The chewiness of the har gao wrapper is due to the mix of flours used, a blend of wheat starch and tapioca starch. The tapioca starch gives the wrapper a sticky, bouncy, chewy texture. This is the preferred, new style of wrapper for har gao in Asia now. The old style uses wheat starch and corn starch, making the wrapper more soft and tender, breaking easily. I've made har gao both ways and I prefer the chew.

The wrapper may be chewy if tapioca starch is used. Some folks like the chewy texture.
