Tonight I went out to try one of Indonesia’s most loved night street foods, Martabak.
The more I live here, the more I realise some foods are not just food… they belong to a certain time, feeling, and atmosphere. And martabak at night just feels right.

Egg martabak is a dish inspired by Arab and Indian cuisine. It originated during the period when Arab and Indian Muslim traders came to Indonesia. The word “martabak” comes from the Arabic word مطبق mutabbaq, which means “folded.”
Sweet martabak, on the other hand, is inspired by a Chinese specialty known as the traditional yeast pancake (Mian Jian Gao / 曼煎糕), which was brought by Hakka (Hok Lo) immigrants from Fujian Province, China.
Martabak is the king of streetfood in Indonesia.

In palembang there is a martabak tambi, a little different type of salty martabak. Basically its same but its not crunchy, the egg dough is thick and soft with potato.
