Lehsuni Mutton Boti Tikka
Serves: 3-4

Ingredients:
Prepare Lehsuni Mutton Tikka Boti:
-Boneless Mutton with fat 750g
-Iodized Himalayan pink salt 1 tsp or to taste
-Kacha papita (Raw papaya) Paste 1 tsp
-Lemon juice 1 tbs
-Lehsan paste (Garlic paste) 1 & ½ tbs
-Dahi (Yogurt) whisked 3 tbs
-Cream 2 tbs
-Sabut Dhania (Coriander seeds) Roasted & crushed 1 tbs
-Kashmiri lal mirch (Kashmiri red chilli) Powder 1 tsp
-Kali mirchi powder (Black pepper powder) 1 tsp
-Garam masala powder ½ tsp
-Lal mirch (Red chilli) crushed ½ tsp
-Zeera (Cumin seeds) roasted & crushed ½ tbs
-Baisan (Gram flour) roasted 1 & ½ tbs
-Chaat masala ½ tsp
-Makhan (Butter) melted ½ cup
-Cooking oil 2 tbs
-Anardana (Dried pomegranate seeds) crushed 1 tbs
-Lehsan (Garlic) finely chopped 1 & ½ tbs
-Zeera (Cumin seeds) roasted & crushed ½ tbs
-Brown sugar powdered ½ tsp
-Kali mirch (Black pepper) crushed ¼ tsp
-Hara dhania (Fresh coriander) handful
Assembling:
-Chaat masala
-Pyaz (Onion) rings
-Lemon wedges
-Hara dhania (Fresh coriander)
Direction:
Prepare Lehsuni Mutton Tikka:
-In a bowl, add boneless mutton, pink salt, papaya paste, lemon juice, mix well, cover & rest for 1 hour.
-Remove the cover, add garlic paste, yogurt, cream, coriander, kashmiri red chilli powder, black pepper powder, garam masala powder, red chilli crushed, cumin, roasted gram flour, chaat masala & mix well.
-Cover & marinate for 4-5 hours.
-Remove cover, take mutton pieces & add in air-fryer bucket (lined with air-fryer liner) & air fry with skewer option, at 170 C for 10 minutes.
-In a bowl, add melted butter, cooking oil, dried pomegranate seeds, garlic, cumin, brown sugar powder, black pepper, fresh coriander, mix well. Anardana & Roasted Cumin Glaze is ready!
-Take out the air-fryer bucket, flip the mutton pieces, apply prepared roasted mutton glaze & air-fry with a skewer option for 170 C for 10 minutes.
-After 10 minutes air-fry with a skewer option at 200 C for 5 minutes.
-in a serving platter, add lehsuni mutton tikka apply prepared glaze, sprinkle chaat masala, add onion rings, lemon wedges, fresh coriander & serve with chapati, raita & prepared cumin glaze.
