My mother made something similar. She used saltine crackers instead of flour on the outer part and would make a white gravy with cream of mushroom added.
Cast iron is superior. I was never lucky enough to inheirit one, but I was able to find a rehabbed one at a yard sale. I make bacon once a week to keep it well seasoned. I don't make fried chicken very often, but when I do it is just perfect every time. I'll have to try pork chops.
