THE EASIEST FINE DINING STYLE SALMON SASHIMI
Delicate salmon sashimi finished with fresh ginger, chives, sesame and hot olive oil creates an elegant fine-dining style dish with minimal ingredients and maximum flavour.

Ingredients
• 200 g sushi-grade salmon
• Fresh chives
• Fresh ginger, cut into very thin julienne strips
• 1 garlic clove, finely grated or crushed
• 1–2 tsp sesame seeds
• 1 tbsp soy sauce
• 1 tsp sesame oil
• 15–20 ml olive oil

Preparation
Slice the salmon into thin sashimi-style slices and arrange on a chilled serving plate.
Finely grate or crush the garlic. Using your fingers, gently brush a small amount of the garlic juice over each slice of salmon.
Lightly drizzle the salmon with the sesame oil.
Place a small amount of fresh chives on each slice.
Top each piece with a few very thin strips of fresh ginger.
Lightly sprinkle with sesame seeds.
Drizzle the soy sauce evenly over the salmon.
Heat the olive oil until very hot and just beginning to smoke.
Carefully pour the hot olive oil over the ginger, chives and sesame seeds. The heat will instantly release their aroma and lightly warm the surface of the salmon.
Serve immediately.
