VIETNAM’S MOST UNDERRATED FOOD CITY – DA NANG
Da Nang sits in the middle of Vietnam, but its food often gets overlooked by travelers rushing between Hanoi and Saigon. In this episode, InTheKut spends the day exploring the flavors that define Central Vietnam, a region known for bolder seasoning, deeper broths, and a balance of freshness and richness that feels entirely its own.
The day begins with mì Quảng, one of Central Vietnam’s most iconic dishes. Unlike the noodle soups found in other parts of the country, mì Quảng is served with only a small amount of concentrated broth. Turmeric-tinted noodles are topped with herbs, peanuts, rice crackers, and a mix of proteins, creating a dish that’s as much about texture as it is flavor.
From there, it’s on to bánh xèo. While many people are familiar with the larger Southern Vietnamese version, Central Vietnam’s bánh xèo is smaller, crispier, and more focused on crunch. Cooked in individual molds and packed with shrimp, pork, and bean sprouts, it’s designed to be wrapped in fresh greens and eaten by the handful.
The next stop is a longtime local institution serving bún chả cá, a fish noodle soup that has been feeding generations of Da Nang residents. Built around fish cakes, fresh herbs, and a clear yet deeply savory broth, it’s a reminder of how closely the city’s food culture is tied to the sea.
As the sun goes down, the episode ends at a bustling hải sản restaurant where tanks, trays, and ice boxes are filled with the day’s catch. Snails, whole fish, and giant freshwater prawns take center stage, showcasing another side of Central Vietnamese cuisine. With hundreds of miles of coastline and some of the country’s busiest fishing communities, seafood plays a major role in daily life here. The flavors tend to be more assertive than in the south, often featuring stronger broths, fermented elements, fresh herbs, and a balance of spice, salt, and acidity that has become a signature of the region.
