The owner and the chef is Pia León. In 2021 she was chosen as the World’s Best Female Chef.

I think your intros have always been very good, and I don't think I prefer this "thrown right into it" style where you're already having food after 1 minute. It would've been nice with more context to what this restaurant is and why you visit it, the welcoming, etc.

I had dinner 3 times in Lima last autumn; all of them down-to-earth restaurants and similar prices. They were all phenomenal in their own right. If you like food, and are ready to take in all the spectacular different scenery and landscapes, go to Peru! As a city in itself, Lima is forgettable though. It has a real 3d world vibe to it, in general. Thank you Sandor, for another great episode!
