This week I tell you I am NOT suffering from aichmomania, there will be bad puns, a whole lot about knives and which end is the ouchy bit. Oh and we will make some really great salsa.

  1. I love the content, and this might be just be a personal gripe with the cinematography that nobody else cares about, but I feel that Altons talking head shots are way too zoomed in. Feels a bit claustrophobic and feels disconnected since you can't see what he is doing with his hands.. A medium shot or a medium close up would feel better than a full close up. It might just might be a stylistic choice but I thought I'd mention it if there are others that feel the same way.

  3. Edge restoration is something I learned at an early age because my family couldn't afford professional sharpening, and I wasn't going to put up with knives that were dull. (We won't go into the "discussions" of "that's not a knife, it's a saw.") I still have my father's butcher knife that was made by my grandfather from a piece of scrapped industrial bandsaw blade back in the WW1 era. I really need to replace the scales on it.

  4. I always hated the knives "out" on a magnetic strip but what about a magnetic strip with light cabinet doors covering the strip?

  5. I don't think I'll ever forget you calling glass cutting boards "dark sith" in your episode on cutting boards. lol I was living with my (now ex-)wife's parents at the time and they had one. I already knew not to use glass cutting boards (oorah culinary school!! rofl) and never did but every time I saw that thing, I chuckled. 🤣 You're a living legend, man!! Keep up the great work!!

  6. When cutting superhots do infact wear gloves cause washing your hands and then using the bathroom is a experience you do not want

  7. I dont understand scraping Jalepenos, if I didn't want heat I'd use a bell pepper. People who do not like hot food, should just not eat hot food. Its on them for being cowards and wusses and I'm tired of protecting them from themselves.

  9. Sharpening a knife is not terribly difficult. Practice on cheaper knives before you try your hand on your good $400 dollar steel and don't wait until the bevel is completely worn away.

  13. this is the longest salsa video that I've ever seen. It's actually poetic how he could take something so mundane and over explain it in such a way.

  14. Knife nerd here. Mostly great info but a bit disappointed to see wetstones absent and advocacy for the use of honing steels.

  16. Yeah, i wear gloves because i was making salsa once and hours later and after many hand washings i took my contacts out and the oil was still on my hands…
