Recipes
Kebab and rice
Kebabs
• 600 g minced beef
• 2 onions, finely chopped and squeezed dry
• 1 green chili, finely chopped
• 1 tbsp garlic, minced
• 1 tsp paprika
• 1 tsp chili flakes
• 1 tsp cumin powder
• 1½ tsp coriander powder
• 1 tsp black pepper
• 1 tbsp flour
• 2 tbsp oil
• Salt to taste
Pea Rice
• ⅓ cup oil
• 1 onion, sliced
• 1 tomato, chopped
• ½ tbsp cumin powder
• ½ tbsp garam masala
• 1 cup frozen peas
• 2 cups basmati rice (soaked 20–30 min)
• Salt to taste
• Water as needed

Method
Kebabs
Mix all kebab ingredients well until sticky. Rest 20–30 minutes. Shape into kebabs.
Fry in oil over medium heat for 4–5 minutes per side until cooked through.
Pea Rice
Heat oil, fry onion until golden. Add tomato and cook soft.
Add cumin, garam masala, and peas; stir well.
Add rice, salt, and water to cover (about 1–1.5 cm above rice).
Cover and cook on low heat until rice is tender and water absorbed (15–20 min). Rest 5 min and fluff.

Homemade Paneer
Ingredients
• 1.5 liters full-fat milk
• 3 tbsp vinegar
• 1/3 cup water
Method
1. Boil the milk.
2. Mix the vinegar and water.
3. Slowly add the mixture to the boiling milk in 2 parts, stirring gently until it curdles.
4. Pour into a cloth-lined strainer, rinse with a little water, and squeeze out excess liquid.
5. Place an inverted small plate inside a large plate. Put the wrapped paneer on top of the inverted plate and place a weight on it.
6. Press for 20 minutes (do not make it completely dry). The large plate will catch any excess liquid.
7. Refrigerate until ready to use.
Perfect for Palak Paneer.

Palak paneer
Ingredients
• 1/3 cup oil
• 1 onion, finely chopped
• 2 garlic cloves, chopped
• 1 tomatoes, chopped
• 1 tsp paprika
• 1/2 tbsp crushed chili (adjust to taste)
• 1 tsp cumin powder
• 1/2 tsp black pepper
• Salt to taste
• 2–3 cups spinach (frozen or fresh)
• Paneer cubes (as needed) Paneer
• A splash of water

👩🍳 Instructions
1. Sauté base
• Heat oil in a pot.
• Add chopped onion and cook until golden-pink and soft.
2. Add aromatics
• Stir in chopped garlic.
• Cook for about 30–60 seconds until fragrant.
3. Cook tomatoes
• Add chopped tomatoes.
• Cook until they soften and blend into the base.
4. Add spices
• Mix in paprika, crushed chili, cumin powder, and black pepper.
• Stir well so the spices cook slightly and release flavor.
5. Simmer
• Add a small splash of water.
• Cover and let it cook for a few minutes so everything blends.
6. Add spinach
• Add spinach and salt.
• Cook until the spinach is fully wilted and combined with the masala.
7. Add paneer
• Add paneer cubes.
• Simmer for a few minutes so they absorb the flavor.

Chocolate cupcake
🧁 Ingredients:
• 2 eggs
• 1/2 cup sugar
• 1/3 cup oil
• 1/2 cup milk
• 1 cup all-purpose flour
• 3 tbsp cocoa powder
• 1 tsp baking powder
• 2 tbsp hot water
• Melted chocolate (for topping)
• Sprinkles (optional)

👩🍳 Instructions:
1. In a bowl, beat 2 eggs and sugar until light and fluffy.
2. Add oil and milk, then whisk until well combined.
3. In a separate bowl, mix flour, cocoa powder, and baking powder.
4. Sift the dry ingredients into the wet mixture and stir until smooth.
5. Add hot water and mix again to make a silky batter.
6. Pour into a cupcake tray.
7. Bake at 180°C for 15 minutes.
8. Once cooled, dip the tops in melted chocolate and decorate with sprinkles.
