At Teppanyaki Ousaka, the chef brings out a whole Omi Beef striploin — one of Japan’s three legendary san-meigyu Wagyu — and portions it on the counter in front of you. Thick enough to hold structure on the teppan. Thin enough to melt the second it touches your tongue.

Why does this matter? A freshly-cut surface hasn’t oxidized. The fat hasn’t bloomed. The aroma hits you before the sear does. You’re tasting the meat at the moment it was meant to be tasted.
