What a totally daft way to start fuse flavor in a burger. He could have minced all of the ingredients in the marinate and dry aged it. Would have been a far cleaner less wanky Michelin grade burger

Could you try making a burger with varying amounts of pork and beef?
Pretty sure the same result would have been achieved by just deep frying your steak in beef tallow, no need to "dry age" (the fat prevented any dry aging anyway) or do the dipping trick
