Watermelon Salad Recipe

1.Start with 4-5 cups of watermelon chunks at the base base – I cut these in small chunks, about 1/4 inch on each side.

2.Add 4oz blueberries or blackberries & 4oz of raspberries.

3.Add 1/3 cup fresh finely chopped mint. This part is important, trust me!

4.Add the zest and juice of 1 large lime.

5. Top with 4-5oz of feta and a couple drizzles of high quality olive oil, and a couple pinches of salt (but not too much because the feta has some salt already!)

6.Sprinkle 1-2 tbsp chile lime seasoning or tajin.

7. Toss gently but well, & right before serving, crown it all off with 1/3-1/2 cup freshly toasted pistachios.

This is best served IMMEDIATELY

  1. I agree. I’m also like a neutral platte with a touch of black. I try to put color in my wardrobe and it’s slowly being added. I shop at a certain women’s shop and they have convinced me to add the bright bold colors for this summer. I did purchases a couple of things and so far I liked the colors that I I have chosen.
