Perfect for your 4th of July festivities!
Baked beans:
3 pieces bacon
1 cup total small dice onion carrot, and celery
4-6 garlic cloves
The leaves from 3 sprigs thyme
1/2 cup cider vinegar
2 cups chicken stock
2 cans beans, drained and rinsed
1-2 tbsp mustard
1/2 cup bbq sauce
2 tbsp butter
1/2 cup minced parsley and chive
2 tbsp butter
Salt and pepper
Quick BBQ sauce:
1 cup ketchup
1/2 cup water
1/2 cup cider vinegar
2 minced garlic cloves
2 tbsp brown sugar
1 tbsp Worcestershire
1/2 tsp onion powder
1/2 tsp dry ginger
1/4 tsp ground clove
1/4 tsp nutmeg
1/4 tsp dry mustard powder
Simmer over low heat until sugar dissolves

Why do so many recipes call for celery? Why not hearts of palm, mesquite, red oak, cedar, or pine tree bark? It's basically the same texture, and none of them taste as bad. Any one of these might be a cheaper and tastier alternative, too.

What can I use instead of bacon?
I think Heinz ketchup is a tangy delicious treat. Mixed with Worcestershire sauce, hot sauce of choice, play around, and you can create a delicious BBQ sauce. I discovered this after some bad bottled sauce and no desire to spend hundreds exploring the BBQ sauce aisle. LAter I found out that some version of this elixir is the basis for DC BBQ.
I like that you encourage exploration – it's your kitchen, your fridge, and if all goes to heck – the dog is always happy with a new treat.
