Carrot rounds for chicken noodle soup. It was my first and only trip to the ER as an adult. I never did find the tip of my thumb. I assume one of my two german shepherds or two cats did.
Soup turned out nicely, in the end. I made homemade noodles for the first time for that one.

I very much appreciate the many MANY times you tell us to use the hand guard. Those mandolins can be scary without!
Or I will use the kevlar glove that I bought specifically for that purpose. ๐

My trick to shredding cabbage is to halve and core the cabbage. Then like a woodworker on a table saw I start the cutting without the guard with the half cut edge is perpendicular to the mandolin. After a few passes I then flip the cabbage 180 and use the handguard on the part I cut with the mandolin. This maximizes the yield while minimizing the safety risk so long as you only take a few passes while your hand is high above the mandolin. I would aim for about 1/8th of the half cabbage shredded by hand, definitely no more than 1/4.

I use a mandolin at work all the time. Never used the guard(we don't even have one). Never got cut. Now that I've said this, I'm gonna jinx it.

Japan now sells a cabbage peeler. Seems a safe alternative.
