Potato & Stuffing Casserole

1 can (10.5 ounces) condensed cream of chicken soup, undiluted
1 container (8 ounces) sour cream
1/4 cup chopped onion
1 stick butter, divided, melted
1 teaspoon salt
2 pounds red potatoes, peeled and chopped
2 cups shredded Cheddar cheese
1 box (6 ounces) stuffing mix

Combine the soup, sour cream, 4 Tablespoons of the melted butter, and salt in the slow cooker.

Place the peeled and chopped potatoes, onion, and the cheese in the slow cooker. Mix well.

Sprinkle the stuffing mix over the potato mixture and drizzle with the remaining 4 Tablespoons of butter. Cover and cook on LOW for 8 to 10 hours or on HIGH for 5 to 6 hours, or until the potatoes are tender.

  1. Hi. I noticed you were using an Italian herb stuffing mix. I always have cornbread stuffing mix in my pantry. Do do you think that would work well with this dish?

  5. Could you also cook it in a casserole dish in the oven?.. covered for say 30/40 min.. then uncover to crisp the top? Or would it not come out the same? This sounds delicious! 🙂

  6. Am I crazy when I say, that the sound of slicing and choping things, is relaxing to me ? Years ago, when Martha Stewart used to have her show on tv, it would come on late at night and I'd fall asleep to her cooking. Love your recipes !! I was hospitalized last year with some health issues and the doctors said that I need to start cooking more of my own food. So channels like your's have become a "prescription".🤗 I could see this as a breakfast dish with some scrambled eggs and turkey sausage. Great for Christmas morning .😋

  9. Maybe add some ham cubes or bacon crumbles? Add French-cut green beans? Serve over lettuce leaves? So many things that you could do with this recipe!

  10. I made this dish of yours, but just a little different. I added red peppers, milk, bite size chicken breast bites and about half of cup of chicken broth with a couple of spoonfuls of corn starch. Oh, my goodness, it was a delicious meal. I think we will have this for Thanksgiving but add turkey instead of chicken. That will be an easy Thanksgiving meal. this meal will def. be going on my rotation of meal plans. Thanks for the kick start. I love watching your videos. Keep up the good work. Also remember you can always come and sit at my table for dinner. FYI i had leftovers this morning with fresh scallions on top. Oh, so good. what a way to start the day. Have a great day.
