🍲 Today’s Recipe: Chowder

Ingredients:
1 Leek
3lb. Clams or 400g clam meat
1/3 c. plus 2tbsp AP Flour
3 1/2c. Water
1/4c. Butter, Unsalted
2 Celery Stalks
2 Carrots
1 Fennel Bulb
3/4c. Dry White Wine
2 Small Potatoes, Book asks for red, I used yellow, that is what I had
1 1/2c. Milk
1/2c. Heavy Cream
1c. Peas
1 1/2tsp Tarragon, Fresh, Fine Chop
Pea Tendrils
s/p

I Added: Lemon, Paprika for garnish. A bay leaf in here would be nice too.

Method:
0. Set up your mise, get all your stuff out and ready to cook. Measured and all.
1. Clean clams and cook clams, reserving the strained cooking liquid.
2. Trim up all veg how you prefer, I saved the fennel fronds.
3. Over medium heat, add butter to the pan, add celery, carrots, leek, fennel. Season here. Stir and cook till sweated through.
4. Once cooked slightly, add the wine, and cook it down, then add in the flour slowly, letting it cook as well.
5. Add in the clam juice slowly, making sure to not let it clump. And then add the water slowly.
6. Add in the potatoes and simmer till cooked through.
7. Add in the milk, cream, peas, and tarragon. Simmer till the peas are cooked.
