One pan taco tortellini is the weeknight dinner mashup that makes absolutely no sense until you taste it โ and then
you’ll make it every week. Seasoned ground beef smashed and browned, diced tomatoes, taco seasoning, and
refrigerated cheese tortellini all cooked together in one pan until the tortellini soaks up all that taco flavor. Topped with
sour cream, shredded cheese and green onion.
One pan, under 30 minutes, and your family will request this on repeat.
WHAT YOU’LL NEED
– 1 lb ground beef
– 1 can Hunt’s diced tomatoes
– 1 packet taco seasoning
– Garlic powder
– Green onions
– 1 package refrigerated cheese tortellini
– Shredded cheese
– Sour cream for serving
– Broth (optional)

RECIPE โ One Pan Taco Tortellini
Ingredients:
โข 1 lb ground beef
โข 1 can Hunt’s diced tomatoes
โข 1 packet taco seasoning
โข 1 tsp garlic powder
โข 3 green onions, sliced, divided
โข 1 package refrigerated cheese tortellini
โข 1 cup shredded cheese, divided
โข ยฝ cup broth, optional
โข Sour cream for serving
Instructions:
1. Add ground beef to a large pan over medium high heat. Smash and brown using a meat masher until fully cooked and
broken into small crumbles. Don’t drain.
2. Add diced tomatoes, taco seasoning, garlic powder and half the green onions. Mix with meat masher. Reduce to low,
cover and cook 7-10 minutes.
3. Add tortellini directly to the pan and stir to coat. Add a splash of broth if you want it saucier. Sprinkle half the cheese on
top.
4. Cover and cook on low 7 more minutes until tortellini is cooked through. Stir halfway.
5. Top with remaining cheese and green onions. Serve with sour cream and any other toppings you like.
Tips:

The meat masher breaks the beef down finely so every bite of tortellini has meat in it.

Don’t skip the low and covered step โ that’s what cooks the tortellini without drying out the sauce.

Leftovers reheat great with a splash of broth.

Im a cat lover myself with 3 fur babies but i do not let them near or on areas of food prep and would definitely wash hands after petting or picking one up before touching/prepping food.
I just made this. Idk, my ground beef might had been a higher fat content (unlabeled in my freezer) so I wish I had drained the beef and added more broth, โcause it is a little greasy. Otherwise, easy-peasy and delish!
