The ONLY Authentic Mexican Rice Recipe You’ll Ever Need | Fluffy, Moist & Perfect Every Single Time!

If you’ve been searching for the perfect Mexican Rice recipe, this is it! Fluffy, moist, and packed with authentic flavor, this foolproof recipe comes out perfect every single time. Made with simple ingredients and easy techniques, it’s the side dish you’ll want to serve with all your favorite Mexican meals. ❤️

This recipe is featured in my first cookbook, and it’s my grandma’s recipe—one I treasure deeply and keep very close to my heart. I hope it becomes just as special in your home as it has always been in mine. 🤗

Ingredients
* 1½ cups long-grain white rice
* 3 medium Roma tomatoes
* ¼ white onion
* 1 garlic clove
* 1 tbsp chicken bouillon
* 1 tbsp tomato bouillon
* ½ tsp ground cumin
* 2¼ cups water
Optional:
* 1 jalapeño
* Fresh cilantro

Notes:
* For a more natural flavor, you can substitute the chicken bouillon with 2¼ cups chicken broth instead of water.
* You can also replace the tomato bouillon with 1–2 tablespoons tomato paste. If using tomato paste, adjust the salt to taste since tomato bouillon is already seasoned.
* 1 serving of love 💕

  1. Amazing! And to be honest, even though I don't like cilantro, if there are enough flavors with it, I don't mind. This looks like a dish I could dig into.

  2. ❤❤❤yes the best growing up my grandma used to jar everything you need for rice so when we were cooking, it was already mixed together. Oh my God it was the best. This is an amazing recipe. I am so glad that you keep bringing amazing authentic Mexican food to all of the world.❤❤❤ also when we have leftover rice, we love to add chorizo in it the next day, put a little sour cream, the best in a burrito or a little taco

  3. This is how my grandmother makes her rice! I'm the only one in my family who has added the jalapeño! I'm glad you do the same here! It's such a HUGE part of flavor!

  4. The best authentic Mexican rice ever! Looks unbelievably delicious and it's absolutely irresistible Claudia, like all your phenomenal dishes! Thank you so much for sharing, you are an amazing Chef my friend! Much love to you and your family from Poland!❤❤

  5. That's how my Hispanic wife would judge a Mexican restaurant. First thing she did was take a bite of the rice and if it wasn't good we'd leave. She thought. If you can't do rice correctly then what about the rest of your meal?

  6. In a lot of Mexican restaurants the rice is split or cracked. I love that texture! How is that achieved? Also, you are gorgeous!

  7. 2:27 Wow 🤩 what a great taste test face Claudia, you always nailed it…I do a little different thing with the tomatoes 🍅 I make them roasted with the garlic and then I put it into the blender and that makes the rice taste a lot more delicious… I learned that from my grandmother, Saludos 👋 cordiales!!!You have a great weekend!!!👋😃👋

  8. My mom always made her rice with canned tomato sauce. She never blended it. She made bomb rice.

  9. Right on time as I was going to make the pollo al carbon and needed some Mexican rice. 🍚 😅🎉🎉

  10. I've made Her recipe numerous times, I just NEVER have a Hot Pepper to put in it, My Family is FINE without the Pepper. We can always add Salsa to anything…but you can NEVER take the Heat out.

  11. don't take the lid off for 25 minutes for the fluffy stuff, even if the button burns, don't take the lid off unless you like mushy rice, a cast iron pan is best for this

  12. She’s an alchemist in the kitchen- Spanish rice is very challenging but she makes it look like American Mac n cheese!

  13. I grew up seeing my Mexican mom always make delicious Mexican rice, but she never added different seasonings or peppers or cilantro. Many Mexican restaurants I've been too never make it spicy or add cilantro. All my Mexican Tia's and grandmothers did the same and theirs were always delicious. I didn't even grow up with cilantro in our food when I was a child to now..they only had it on a side if anyone wanted it in their Mexican homemade food. But most of the time, I never even seen cilantro or hot peppers in Mexican rice. My mom and family called it Spanish rice, even though we're Mexican.. Maybe Spanish rice is just different without all those different seasonings.. just salt and pepper and a little garlic powder and tomato sauce.. lol

  14. Thanks! Mahalo. Gracias. Helpful, educational, well narrated / edited / filmed and all with a calming engaging soothing and energetic presentation
