Forgotten 1950’s Salmon Patties (in just 20 minutes) | Food Wishes

These fast, affordable, and very delicious 1950’s salmon patties started in the 30’s, and reached their peak popularity in the 50’s, but were then forgotten. Happily, I remembered them, and I’m very excited to share them with you since this is definitely a retro recipe worth bringing back to the table. A perfectly paired remoulade sauce for dressing them is also included. Enjoy!

  2. Totally underrated protein bomb. I do minced shallots instead of green onion, a splash of dijon, and some Old Bay (ok a lot) and declare victory.

  4. We ate these in the 60s. Mom added some grated sharp cheddar to the mix, and they were pan-fried in melted Crisco. I want to try it with mackerel instead of salmon.

  5. The canned salmon I usually use has spine bones as well as thin rib bones. While you certainly can eat them, they add a weird texture which I find off putting. I actually like using fresh salmon (usually trimmings from larger filets. It is no where near as cheap but it makes for a much more elevated experience. We also make this with canned tuna.

  8. Still delicious today. Have made they out of any canned fish. In my younger days I'd smash a bag of chips up and use that instead of bread crumbs

  9. I’m in the midst of switching to a radically more heart-healthy diet (no choice, unfortunately) and it has been a challenge at times. I definitely miss the “I don’t feel like cooking so I’ll order takeout” moments, especially since I live alone and I’m really bad at menu planning.
    What appeals to me most about this recipe is that the ingredients are pantry staples and are easily adaptable to what I have on hand. Also, canned salmon (even the good stuff) is a lot cheaper than most lean proteins.

    I will have to make a few changes, however. Capers, relish and ritz crackers are all out (too much salt, though ritz may make a low sodium version), and I could use egg whites instead of the whole egg. They could be cooked in olive or avocado oil instead of butter, and I’d have to rethink the sauce.

    Does anyone have any suggestions for adding more flavor? Thanks! ❤️

  10. Mom made these with Saltines when I was growing up. My Grandma Katherine even after she got meals on wheels would buy little things of ice cream, and several cans of salmon.
    Due to my allergies, the last time I made anything similar, I used salmon, tilapia, sweet potato, navy beans, potato flakes, and an egg. Lemon juice and onion powder, but I don't remember what else I added for spices? I made a few fish and cheese with relish and mayo on toasted lentil bread buns.
    A frozen berry strawberry jello salad, and nutmeg butter sauteed asparagus onions and mushrooms, and cherry lemonade.

  12. My grandma made salmon patties with just the salmon, salt, pepper, egg yolk mixed in and whipped egg whites folded in then fried. No crumbs of any kind or other seasoning.

  14. Totally my Mom's recipe back in the '70s and '80s. She was down with the Saltines. I make these occasionally like going through an old family album.

  17. Wow. This is like a faintsy version of my grandmother's salmon patties that I used to eat as a tyke. Unfortunately, Grandma took all of her culinary wisdom and recipes with her when she died. Thanks for sharing this.

  18. I made salmon recently that wasn't really a hit, but then turned the leftovers into patties and everyone loved it. Made with panko, but crackers are a great idea! Sometimes the less fish looking and more burger looking something is, the better.

  19. My family never fogot them–we still have them several times a year. Canned pink salmon, saltines, egg, lemon juice, black pepper. the only thing we do differently is to scrape off the skin, which is too strongly fishy for our taste. Cooked either as plain patties in a pan, or as a loaf in the microwave.

  20. I remember this well from when I was very young — probably the first fish I ever ate. I imagine mom used saltines, not something buttery like Ritz. I'm pretty sure we never had capers. I'm thinking sauce gribiche would be great here (we probably had tartar sauce from a jar back in the early '60s).

  22. My Mom used to make salmon patties every so often. This was 70's, 80's and 90's. So not forgotten by all.

  23. I love Chef John, but I've never seen a canned salmon that didn't need checking for bones. Maybe at the ultra high end, but not where I live. Pick, pick, pick!

  24. Long time vegan but I remember my mom made these in the 50s and 60s for me and made makerel patties for the cat.

  25. When I first started dating my now wife, she made these for me with tuna because I didn't like salmon as much back then. She originally learned how to make them as salmon patties from her grandmother who learned about them from her mother. I never knew their origin until she told me about how she changed the recipe for me! This dish reminds me of how much she loves me!
