I mean as long as the food's good I don't see why the coloring matters. But of course that depends on if the food is good Gordon Ramsay's very picky. But deservedly so he's a professional chef.

Indian restaurants love to use food coloring in their food. Especially the chutney, the tikka, and the yellow curries. Although you generally don't need to use yellow coloring; turmeric is bright enough.
The chef probably got confused, by coloring they talking about added coloring but most likely the chef used tumeric what is also a food colouring, but also a spice
