If you’re a fan of grilled cheese we got three of them and then today’s for you and if you’re not a fan of grilled cheese well you have a choice learn to like them or and because I love you guys so much here’s the kind of lineup we’ve got a

Breakfast one eggs will be involved there’s a lunch one tuna will be involved and a dinner one Carnitas will be involved and they’re all going to be good Max and I have already had a drag them down fight them out shoot them argument about what constitutes a

Grilled cheese I believe it’s bread and cheese and whatever else happens happens Max believes a grilled cheese you want to tell the people I think it should be mostly cheese I don’t think you can make it into a big cheesy sandwich well we agree to disagree so I’m doing what I

Want but I’m bringing them down a little bit I’d like to know in the comments what you think do you believe it’s about a thin little squish kid could a grilled cheese be batter but still with melty cheese if it has 75% carneia s onions peppers and then 25% cheese is it still

A grilled cheese people stopped listening to you 15 minutes ago sorry bud but we’re going to get going they’re going to happen fast breakfast now that’s a little bowl that’s a hard-boiled egg nobody said breakfast egg had to be a over easy poach that kind of thing it’s still breakfast and

Gets a piece of ham is super thin I would put two but you’ll cry there we go this lid goes on oh Mama Mia that’s okay we can fix like this now for the outside look it’s a grilled cheese you have a lot of choices butter is the common

Thing to use sometimes Mayo is common in this case I’m going to use Mayo with a little shot of sriracha just to wake it up a bit and then you come back in you mix and you spread and when you have good coverage on this first half we pick

It up and we go to the flat top and Mayo side down you want a little Sizzle you don’t want a lot of Sizzle and to ensure that Max gets the flattened can’t tell what’s in it it’s just a couple of pieces of bread look we’re going to put

Some weights on it like that I like using weights in a situation like this because it gives even heat coverage underneath and get a big beautiful golden brown all the way across all right let’s have a little look look it’s time oh it’s nice all right on goes the

Top and that’s why I leave the top void of butter or Mayo until I want to flip it because I like squishing it down either with my hand or with weights now we’ll see if the weights did their job when we flip huh not exactly even all

Righty so let’s let it do its thing on this side put the weights back on again we want the even brownness all the way look that’s what we’re going for all right let’s take the kit off we’re down that’s my favorite side that’s why I’m showing you that how beautiful that is

And how about we cut like that I love it there’s something about the melty gooiness that makes a grilled cheese for me this is a perfect example and this will be the perfect bite oh look it hey now look what’s happening here the sweet of the BIOS is one of the

First things you got it’s an amazing breakfast ham egg grilled cheese it’s good and the little bit of Spice from the Sriracha mayo on the outside does this a very good thing okay lunch is next I think you’re going to like it this guy starts

The same way in that there’s a bowl but this one gets tuna at the risk of some of you calling it a tuna melt I’m going to call it a tuna grilled cheese so because you need something to hold it together we’ll use again a little bit of

Mayo and now the following this is kind of a Mediterranean esque version so little red onion some diced calam olives could be basic black olives if that’s what you had some Capers and by some I mean maybe a teaspoon worth God I love them though that should be good little

Red pepper flake I’m really excited for this salt and pepper little parsley and this we will mix of course you got to break up the tuna but we’re not turning this into tuna salad by using a ton of mayo just enough to kind of help it stay together and one more thing little

Squeeze of lemon juice just to pick the whole thing up great now we can build going brown bread this time because in our cheese of of choice with this Mediterranean will be mzero lovely mzero and yeah what the heck we can do this just double it up it’ll be great now

This incredible tuna that’s not a grilled cheese that’s a tuna salad sandwich oh that’s a good example there’s a fine line anything can be a grilled cheese complainers and and by that I mostly meant Max Fine anything can be a burger I agree except when you put you got a beef dip

A burger marshmallow fluff in it that is not a burger chicken salad sandwich Burger you have so much to learn one day when you’re old and you have some experience you’ll change your whole outlook and the last thing we will do to this is some pepper good coarsely

Cracked black pepper and then of course the cheese I know I said the last thing was the pepper but I lied as Max would say I’ve been lying to myself a lot today and this is the only one of the three that gets just regulation butter

It’s not like butter is a bad thing I just have a different plan for the last one so we spread evenly there we go we pick up and down we go oh couple pieces fell out occupational hazard it’s going to happen you all be okay now we’re just

Cooking till it’s golden brown on both sides when it’s time to flip more butter shows up as evenly as you can and we flip okay so it should be obvious now we’re letting it brown on that bottom side we want the cheese melting all the way through the whole thing’s going to

Heat and get lovely and when it’s there off she comes ladies and gentlemen I present my favorite side of this one look that cheese came out and started to melt on the flat top that’s always a good sign beautiful both ends let’s cut this guy in half and see what we got we

Got that for a start and oh I love that that’s perfect for me this kid this kid this kid ah I just I’m so happy and my bite is right there is that gorgeous it’s gorgeous it really is the lemon you call this anything you want I’m calling it a Mediterranean

Grilled cheese and it’s freaking insane insane the Capers the olives it’s everything is so good and what made me think about this was the short rip poop tesca we did a few weeks ago damn it okay one more bite but the next one starts right here in the flat top oh and

Is it going to be good we got two things going on here the first is going to be some oil on that side and then some sliced yellow onion and some poblano peppers damn I’m excited already these guys need to soften you do want them definitely softer than where they are

Now so give them a couple minutes maybe we’ll hit him with some water put the cap on them next up on the other side again a little oil and now some leftover Carnitas and whether you make your own by the way couple good recipes at the cooking guy.com bring some home leftover

From a Mexican restaurant visit or buy it already made in the supermarket market and once you’ve got it we just want to flatten it start to get it crispy because that’s when it really shines back to these we are going to give him a little water we can do that

Right now first a little salt and pepper and we go like this let that Steam Away let’s look at this business oh I know it’s crispy underneath so watch it’s a little extra oil for when you flip and then you go like this see this this that is where

We’re headed that is crispy Carnitas land that sound like guy Fier for some reason one thing to do while this is all finishing we’re going to take our Mayo in a little bowl we’re going to add one thing some of my beloved squeeze garlic this gets mixed and that garlic

Mayo will go on the outside of the grill cheese all right here we go first up our cheese this is kind of the easiest one of the group and I’m using pepper jack for just an extra little hit of spice now let’s just say hello to our onions

And peppers by the way just an outstanding combination all right so after youve got your onions of course the carnus are going on top another layer of cheese on top of that and our Top bread followed of course by our garlic Mayo when you’ve got all

That ready to hit the flat top and down we go a little squish let it get brown We’ll add more of the garlic mayo and flip it time for the flip so we Mayo this top side and over we go that to me is a perfect grilled

Cheese and we’re there and it’s time and oh damn it’s hot wow and that by the way is my favorite side mind you the ends are pretty good too and we cut and stack I’ll be honest this is the one I’ve been looking forward to the most crispy Carnitas the soft peppers
