Ingredients and the directions Zach sent this Pat Tha recipe I’m very excited for it I’m going to call it cheater Pat Tha there a couple things we’re not going to do palm sugar who knows what palm sugar is exactly you got to go find it is normally used we’re substituting with

Brown sugar I like that Zach and instead of Tamarind paste we’re going to use for that uh that what’s this that sour kind of thing we’re going to use rice vinegar it’s all going to be good I’m not going to use a walk I’m going to use a cast

Iron pan look when I was a much younger man I went out with Debbie Jia and Debbie jia’s mother made amazing Chinese food in cast iron pens so I know Pat is not Chinese I’m just saying if you can make it in a walk you can make it in a

Cast iron pan and that’s what I’m doing what else I might change the order a little bit to Zach cuz I think you can do it all in one without taking things out don’t worry about that now here’s what we’re going to do we start softening our noodles we make a sauce

Then we walk away it’s all good these are traditional Patti rice noodles it’s 8 oz we only need half so take half put them in now we Add boiling water you want to make sure they’re covered now we can make a sauce we begin with 3 tablespoons of fish sauce wish I could

Count and TI I don’t know what that would be so I’ll just say do TW and now 3 tablespoons of brown sugar and this is where the palm sugar would have come in but we’re not using it of course like you can I don’t want to dissuade you

From doing this the right way I just think cheats are a good thing if you’re can get the the food you want in an easier way why not now instead of The Tamarind paste we’re going with rice vinegar three of these recipe below don’t have to write anything down and

Then a teaspoon of soy sauce but a half teaspoon of red pepper flake juice of 1/ half of lime and whe mix you just mix it till the brown sugar is nicely dissolved and that’s pretty much there we can get our pan cuz we’re ready to hit it so

Zach pardon me for doing this out of order but I think this is going to be okay little oil in our pan on the heat and in goes one shallot diced up this gets just a little bit this all happens really fast God I hope I don’t forget
