More shocking than ever I’m Amazed you’re still open if I have any hope of saving these restaurants this is my kitchen sh I’ll have to go to helenback okay in 24 hours and look at you I wouldn’t trust you running my Bath I’ve just arrived in the capital of Arkansas Little Rock a thriving Metropolis Little Rock is situated on the beautiful Arkansas River locals and visiting tourists alike comfor the culture history and of course great food Southern Boulevard or Soo sits on a very busy Main Road in North Little Rock
Wanting to pay tribute to his Korean mother Jermaine opened this restaurant almost a year ago unfortunately his lack of wrestler experience is taking its toll my name is Germaine Burton I’m the owner of soo soo is a Korean and American infused restaurant okay y’all got everything up
Here growing up I had a lot of Korean food and me introducing it to everybody else I thought that it would be one of those great ideas do me a favor while you’re back there check those bottles cuz I don’t know the last time we actually restocked that when I decided
To open up the restaurant I really thought that if I had the right staff in place that this business would run itself so we’ve only had two tables today you got to be kidding me nothing has really came together the way I envisioned should be in this F believe

Starting tonight yes sir okay so what I’ve done is conceptualize a menu that brings in that Korean flare that Asian influence with a Southern twist sounds amazing take a look you must recognize out there the scallion pancake s on some grilled calamari marinated in soy beautifully grilled next to that the
Catfish sliders catfish we know is tasty right the secret behind that is the breading next to that our first entree is a beautiful delicious slow cooked P pork and then some spiced delicious fries you must recognize that now they soy marinated chicken a queso with kimchi fried rice next to that a grilled
Flank steak it’s simple and attractive to the eye the new menu is very simple and it’s still different like I want it to be in Korean infused food I think it’s absolutely amazing a little touch of oil first okay chicken rub it all that amazing seasoning yep straight in
Skin side down and I’m a little put butter in there as well because we marinated okay and the sugar it burns very quickly so the butter literally cool that down and then turn that over and get that into the oven okay 450 for about 12 minutes minutes
Okay now you must love Kimi fried rice yes come on onions in first this is day old rice by the way get that Rice nice and crispy okay lightly season it as well at the same time kimchi goes in right let that go nice and crispy once it starts to get really nice
And sticky make a little well in the middle and then I got my egg and fry that so beautiful finish that with some of my delicious crispy bacon get a little Southern Twist on there okay and then finally some nari does that remind you of home oh
Yeah the rice sits on the plate I’ve glazed that chicken sit that on top delicious dig in please M very flavorful flavorful don’t believe right good and juicy juicy so I feel like I have more confidence that I’m getting the tools that I needed and I can change them customers faces from

Need of my help through no fault of their own flood there’s people in the Water fire the floor is Buck or are we going to die tornado so Scary this week I’m heading to elut City Maryland a town twice hit by devastating floods you see 12 ft of water come through and you just all the emotions come back at once they’ve already been to Hell and now it’s up to me to bring
Them back so for the first time ever I’m going to stop the clock because I’m not going to be working with just one restaurant I’m going to attempt to save an entire town right you guys ready it is the most ambitious project I’ve ever attempted let’s clear this
Place out but with the help of a few special friends I can still work up a sweat I’ve got a plan for these storefronts I want to tell the story of the town and people who still live here today uh they look fantastic thank you we will answer the call of this SOS
Ladies and gentlemen Main Street is [Applause] open I’m in a secret air strip near elica City Maryland a historic town just out side of Baltimore I knew coming in that I would need all the help I could get so I went straight to the top fre arm I called Maryland governor Larry

Here we are approaching elegant City you can see some of these Creeks where some of the restoration work is being done but you see that this water is a part of what overflowed wow the wind of that river is incredible here we are with Main Street that just overflowed these
Banks wow unbelievably devastating seeing this Devastation firsthand I have my work cut out for me luckily while I Scout from above my team is already Wheels on the ground this is my first time I’m taking on such a massive operation but I will do everything in my power to save this
Town thank you sir appreciate It in 1772 Al city was founded on a river it’s been a remarkable resilient town since it was founded you know how much I love this place thank you so much for that yeah the number one thing that makes elate City so special is what a
Solid Community we have how many are in your three three you’re right here enjoy thank you things are going well and life was pretty good and then in July of 2016 thunderstorm in Maryland they’re pretty frequent but we’re in a valley built on top of a river and there was
Nowhere for the water to go Water started coming down Main Street power count 911 the water has broken through the floor we can’t get out the back this is a Phoenix Emporium we are we underwater and we are trapped and th there people in the water it was the longest 45 minutes of
My Life um it was devastating to see a vibrant thriving Community cease to exist overnight and became a construction site for a year that was difficult to deal with after the 2016 flood you know people really came out and supported us it was just like we got to get in here
And work and get it open and and let’s roll Town’s just coming back businesses are just opening and this happens again even as the water was coming up I couldn’t imagine going through this again less than 2 years later that we thought was going to a once in a
Lifetime once in a thousand year occurrence come again was devastating God this is worse than the life get to Higher Ground okay can’t get out are we going to die how does that happen twice we had sunk everything into rebuilding the first time the town never quite recovered some
Customers never came back some of our favorite places were unable to come back and you know it was really sad half my friends got flooded out and they’re gone so it’s like you had to start all over again but if we had to close doors it would be catastrophic loss for everyone
But you can only fund something for so long before you’re forced to make a tough decision oh man El said we need some help just to bring back the love and bring back the people I’m more ified what’s happened I am devastated but this is not a chance
To hold a pity party this town’s over that they want to fight for what they believe in and so I’ve identified three locations that if revamped can be cornerstones to help bring tourism back to Old elate City the little market Cafe and its beloved owner Jenny have never financially recovered from the floods
Here you are the Phoenix Emporium at the bottom of the street is being torn down by the county to make make a pathway for any River overflow in the chance of a future flood the owner Mark has purchased another restaurant on top of Main Street and is attempting to merge
The two businesses together here you go beer wine and Cocktails and finally Jackson Edwin a new a business that has struggled to find an identity and in turn customers this whole relaunch is about saving the town if I can turn these businesses into local highlights it will help to
Revitalize this entire town just in time for spring and tourist season but in order to really assess the issues they’re facing I’m going in undercover as an historian to study it up close and personal now in order to understand where this town is at I need to fully
Understand where it’s been time to take a Walk this is the main streets yes look at the architecture I mean beautiful it’s incredible really beautiful it feels empty M it’s it’s quiet it is very quiet yeah and what’s that building over there um that’s one of them that we’re going to be losing in terms of the Town
Shutting it down um we have a flood mitigation project that’s coming to help the situation in town when there’s heavy rains that building and the three beyond that are going to be coming down basically the idea is to help with how bad the water was flooding and the water
Levels here where were we we we’re at probably about this height right here lucky it didn’t collapse my God yeah so lot of people have a little a little bit of anxiety there’s no question this is there’s a lot of confusion about this I think they have an arcade there’s a
Coffee shop on the second floor Barber on the top floor so confusing with the arcade no yes opposite here looks somewhat sad and depressing this town is a real ghost town it’s terrible all of these boarded up Windows even though they have suffered so sad oh my really
Sad I’m here to make sure they can get back to business as usual and that means some tough love and starting over from scratch gentlemen shall we yeah sure we’re heading to lunch at the elant Mills Brewing Company we have a table upstairs the restaurant that is merging
With a condemned Phoenix Emporium from down the street if this is going to be a main stay I need to make sure the food will keep the tour is coming back how are my darling good to see you good to see you as Hy to see you lovely hi
Almost with this sort of German influence Austrian wild ball G it’s a little bizarre menu right now what the [ __ ] is that some weird ass salad all right what can I guess this gentleman’s going to have the Schnitzel okay I like to have the rib eye steak

As fun as you can get how of burgers good as always no cheese really that’s the good part Phoenix is the center of Main Street in Al City everyone has memories here and Mark is the best the way our building is situated at the bottom of the hill we’ve been described
As the drain of elegant City when the water comes down Main Street the buildings actually act as B wall so there was nowhere for the water to go and all water ends up here after the 2018 flood there’s been some flood mitigation plans to help alleviate the
Water level the current one calls for the removal of four buildings they all involve knocking this building down so when is the last Mar 31 is the last day here we’ll miss this location but miss it terribly we want to be here we didn’t want to go and desperate to state in the
Historic district on Main Street in elant city so I bought Mills Brewing Company and the pH is merging their operations with El Mills what’s your name Tim Tim yes sir how long you been working I’ve been here 23 years 23 years it’s almost kind of like somebody bought
Into your house and they’re moving their family in with you we’ve been here since 79 is the Phoenix it’s devastating to see everything go I’ve been here for so long at this point this is my entire livelihood it’s my source of income it’s a job for 25 employees that’s a center
Part of the community I knew it would happen but this is all I know I want to Stay first of all I’m really sorry to hear about this and to see how successful this place was this was a very successful restaurant for a very long time take me back to 2016 it was a Saturday and I got a call from uh my manager he said we’re
Flooding rolling through town it was it been up to 6 7 8 ft the sidewalks were gone they uh they had washed away and I ran past the police barricade cuz my people were here and I I had to get to them there was a customer that literally
Reached out through the front door and pulled me across but the next one was on May 27th of 2018 my staff and myself with lots of customers on the second and third floor the water tour through the building and then came back and swirled through like
A whirl poool in here it was Carnage everything was gone seeing the pain that my staff went through the terror the Panic the floods have scarred me you stomach the losses you dust yourself down you get hit for a second time yeah and the third blow has
Been told that the business has to shut down yes right what will it mean personally to see this building come down I don’t know that I can can do it I’m going to be devastated there is my family and then there is this business and that’s
All that I know than all that I am I’m as upset as you are to see this coming to an end but there need to be changes this town needs impact you’re the heart and soul but your heart and your head is down here the Phoenix and I need that
Transformation up into the brewery and so I need to see all the team from the Phoenix I’d like to see all the team from the brewery together from meeting understood it’s not easy to accept change thanks Mark especially when is out of your control clearly Mark isn’t ready to lead
His newly assembled team into the future so I need to talk to both teams directly to see if this merger has any chance of succeeding how are we I’d like to say thank you for your patience the consequences of having to merge two businesses into one are super
Exciting and with one chance to get this right change is important Tim the one thing that needs to change here is the food well uh it’s not 1972 the kitchen isn’t my expertise I’m not a chef but um you know we didn’t have control over the menu the owner at
The time I was the owner for 23 years and the menu needs a major update so who is the head Che doc are you I’m kind of a kitchen manager manager as in acting head chef uh so Mark with no head chef who’s going to run this kitchen I’ve had a long-term
Chef at the Phoenix Chef Julio I’m bring in his daughter Chef Cynthia huge responsibility on your shoulders young lady personally I’m trying to see what identity we can both become you know something that this Main Street doesn’t have yeah let’s agree we need need an identity well the ability
To have a group of talented people come in here and fill holes will allow us to do a things that we’re supposed to be focusing on 10 times better I think there’s a fundamental misunderstanding of this process by both staffs right the staff from meican Mills believes that
We’re coming here to supplement what they’re already doing but the idea that we’re going to take what we did at the Phoenix and move it here doesn’t work we are reimagining what we can be there will be fundamental changes to the way this business is Opera I appreciate that
Honestly and this opportunity it’s the beginning of a new chapter we can’t just bring in each and every one of us and expect this thing just to hey Bingo everybody’s happy look we got a bit of this a bit of that no I don’t give a
[ __ ] who you are everybody in this room needs to fight for their job everybody in this room needs to fight for their their job and prove that you deserve this big opportunity we have a ton of work ahead of us and want to get back to the Bare Bones got this

Can’t get out there’s a little window that leads up a Stairway there and I was able to see him through the window and he kept saying to me I can’t swim I can’t swim that window where is that it’s behind yes please so you’re outside he’s inside yep
And the water is starting to breach this point here so I tried to kick the window in but I couldn’t so I ran up and screamed and two guys came running down and they kicked the window in and he crawled out and just grabbed me man and
It was I felt like this huge relief yeah so scary it’s hard to believe that out there was a horrific scene absolutely yeah my god let’s catch up with a team I’d love to meet them let’s talk to them you going to get them back in yes
So nice to see you all little Market Cafe right we the biggest heart in the country yes after the second Devastation in 2018 you roll your sleeves up you dust yourselves down to get this place back open definitely I mean do anything I could for her this is my family away
From home that’s why once we found out that things were happening the flight was happening again we were willing to work without you know getting paid or anything like that just to get it back together and how does that affection play on a day daily basis with Miss
Jenny whether she’s here or not doesn’t matter if she’s physically here she will always be here she’s part of Main Street she’s just supporting every single business here does she take TI off yeah she took a little bit for the first time the first time first time
Forever definitely 1 2 3 4 5 six seven Talent individuals you’ve just now started taking a day off I I like to see them but it’s been a an amazing insights uh I think the loyalty is second to N I can really now start to understand why

Know I was looking at the footage of the floods and I survived the Indian Ocean tunami in 2004 and I have to tell you the water with the cars floating and crashing into buildings and everything thing looked exactly the same to me so I mean I don’t think people really
Understand how scary that is and really what that looks like reconnecting you know this community is crucial with some hope with some Joy bring back Main Street so I’ve got a plan for like these storefronts yeah I want to tell the story of the Town gotcha we’re a couple

This so I just stuck to something that I know Sprouts it’s comfort food brussel sprout sakat seared chicken just seared the chicken correctly and make sure it was cooked correctly for him so hopefully he’s not going to spit it out I like it look good look good baby
Perfect look good baby look good yeah thank you right uh discard the dish please okay it’s a brussel sprout a suckatash seared chicken okay you got salsa very on top yes love the color on that by the way cooking for Chef Ramsey it’s a little intense to have this food God
Looking over my dish and tasting it what’s the heat coming from these Peppers right here touch you I’m pretty terrified my stomach’s upside down I think it’s a lot of nerves in There how do you cook the Brussels uh seared them mhm with a little bit of that bacon mhm Yeah that’s good pretty good the flavor is there really good um season’s on point I feel good now that he enjoyed it it’s a dream so it’s wonderful what do I do differently touch less sauce so it doesn’t look so sloppy yeah sure thank you okay good job really good how good
Can she become already she’s assertive she’s strong and she understands the fundamentals it’s a positive sign for me but we’ got so much work to do forget anything to do with the old menus we are starting a fresh we have got one chance to put this new business on the map yes
I want to quickly take you through delicious new menu over here we got the most amazing pan roasted muscles roasted and finished with beer and then from there fries on top next to that we got a grilled pork chop a warm German potato salad not ice cold a warm potato salad
It’s finished with a wonderful vinegarette and then house rra breast serve that with some caramelized cabbage grain mustard and Fin finished it with a puree finally is a Powerhouse Burger beautifully seasoned and finished with cheddar and served with fries now I’m ready to get into it you’re ready to get
Into it yes sir first thing fries in get that super hot and then the muscles start off with a touch of oil okay muscles in never done that before yeah we’re toasting them okay that flavor pretty incredible chili flakes in there first in with my shalots in with my
Garlic why sliced and not chopped so it doesn’t burn good question by the way okay beer all the way in now put the butter in there and look at the way they open muscles out into the middle of the bowl get those fries a big Shake seasoned again Touch of chives on there

Cuscus next to that we got a bee full chicken curry sandwich currants almonds arugula and a whole grain bread next to that we got the roast beef melt which is G cheese and then a really nice grain mustard and then over here an amazing flatbread sunnd Tomatoes goat cheese
Bruto and a rugly on top of that now forget that for a moment and just look at that over there right over there where they’re digging guess what we’re doing what an amazing fire pit oh my god when you think of a fire pit what do you guys do in this country
