24 hours I know what you do you fire him this week I’m in Allentown Pennsylvania a town surrounded by Rolling Green HS just 50 mi from Philadelphia Allentown was larg and responsible for the growth of the steel industry during the Industrial Revolution I’m in the West End theater

District an area that seen quite a Renaissance in recent years but unlike the vibrant District the curtains are about to close for The Shanty on 19 an iconic restaurant since 1968 the theater goers enjoyed a great meal in a stunning setting Where The Shanty on 19th was the headliner today The Shanty

Is a poor understudy of what it used to be once I’m here to Breathe new life into this restaurant and I’m going to do it in just 24 Hours I’m Joe I own a Shany on 19th along with my wife Melanie the original Shanty was here for just about 40 years was one of the top restaurants in the area I wanted to buy the restaurant because I’ve been making a lot of people

A lot of money working for them in the restaurant business so I figured it was about time for me to try to make myself some money just wish some people coming the beginning of H Shanny was great the buzz was out but without a doubt we were

Living in the shadow of the old Shanny the old Shanny was a fine dining restaurant that had incredible food we tried to recreate the food and we fell flat on our faces I said they rud oh my God Joe does not know fine dining he

Knows how to run a sports bar he doesn’t have to bake them just [ __ ] fry them [ __ ] so [ __ ] annoying dude my chef Kennedy she’s a bulldog she screams and hollers like a lunatic back there [ __ ] real life struggle here working on this [ __ ] line I’ve got a lot of

Experience but Joe doesn’t let me do what a head chef should do someone standing in the [ __ ] window lying that [ __ ] for me we relax what are you talking about with the lack of business it’s hard to get a staff that stays so I

Have my dad here to help me oh no no no no no what what what uh-uh Joe Senor he’s [ __ ] negative as [ __ ] I don’t like Kennedy’s presentation you can’t tell her anything she doesn’t want to listen they’ll sit at the bar talking [ __ ] about you to the [ __ ] customers

To laugh anymore cuz my life’s such a mess with only 24 hours to put the shanty on 19th back into the spotlight I needed to find out what they were doing wrong so my team told the restaurant that they were trying out for a traditional renovation show whilst they

Were been interviewed we installed hidden cameras throughout the restaurant and have been secretly recording surveillance footage ever since we left it’s obvious that shantia 19th is about to give his life last performance and without my help trust me it’s likely their run will end now as you know when

People know I’m coming they do their best to stay out of trouble so I’m going under Cover let’s get the puck out of here my new friends and I are posing as fans of the local hockey team the Lehigh Valley Phantoms it’s a great area around here isn’t it this is yeah this is a nice area right here it’s been redone vitalized

Comes to business resturants are run on a team right he has a problem delegating Authority doesn’t seem to have a problem delegating alcohol no he doesn’t that’s so here’s the bad news we’ve only got 24 hours to turn this place around so I need all of you committed because that 24 hours

A dining room we don’t pay for that I don’t know if any of the staff are aware but we’re financially ruined literally we hold our breath every month just to pay the bills so why don’t you stamp your foot down Joe he’ll just shut me out and he won’t speak to

Me and it could be sometimes a week or two at a time we say just zip it zip it it’s not your restaurant there’s the door that’s what he’ll say to me and it is my restaurant and he hangs up with me probably like 10 times a week

You up on us you do you know what do you go home and lock yourself in the room no I don’t lock myself yes you I don’t you lock yourself in the room close the door and that’s the way you treat your wife it’s hard to take advice from

Somebody who’s not here all the time and she does know what I’m I have to pay the bills cuz we’re in this mess why would you listen to me if I can run other businesses and be really successful can you imagine what I could do here if you

Just listen to me and work with me she’s out working to bring money back in the [ __ ] till while you sit on your ass and drink it how can we work with this uh he he’s got to change you by yourself trying to do everything it’s not

Working I got less than 24 hours to turn this around I’m not doing it on my own I I need your help put your hands up if you are Committed okay so I’m bringing my team in yeah guys get to it straight away thank you Brian Theresa everything out the whole lot cleared out less than 23 hours we have to start from scratch everybody hands on is that clear what can we do to help everybody bartender I

Need to clear all this [ __ ] everything off the back of this bar has to be completely cleared off with less than 23 hours until the shanty is fully transformed I love it we’re getting rid of that shitty green color meeting with my renovation team at this stage is

Crucial boo first off yeah right Boo I’ve got to go yeah I don’t mind the paneling but how do we lighten that paneling up what what do we do we’re going to add some white marble tabletops up here and change all the tables back there to a white A light bright beastro

Where people want to come gotta that’s exactly I contemp you beastro but it needs that love it needs the warmth in there yes sir with my design team demolishing the chaotic layout in the dining room pull every screw until this thing falls apart I dread to Peak under

The hood in the kitchen I want to move behind the line here come over with me and see the engine that’s driving this restaurant is this on no this is all ice so we have to ice throughout the shift we have to continue to like fill it and

Redo it but it’s not refrigerated no oh my God we’ve lost product multiple times because because we come in and it’s 80° in there it’s terrible and then over here we have our friers one of which blow out fire out the back of it blow out what like fire it literally goes and

It shoots out fire in the middle service service and Joe knows this Joe knows this how long’s it been like that 3 or 4 months now yeah behind the scenes it’s a grim come on have you seen the [ __ ] underneath there the spoons containers and crap come on guys the [ __ ]

Kitchen now what the [ __ ] is that you turned into a [ __ ] Hazard what’s in here take a look oh boy that [ __ ] blood in there that’s miscut chicken wings I think it was 89 cents a pound as if that’s going to make this business successful I mean get get me Joe where

Is Joe Joe yes what the [ __ ] is going on in here look at the blood in there come on it’s not proper Wing it’s the cheapest of cheap Joe gives me cheap products and expects to work a [ __ ] miracle with it we can’t get any lower can we no we can’t get any

Hard of the Theater District H can get for a walk with the largest theater just one block away this neighborhood is extraordinary yeah it is yeah the Theater District when was the last time you went to the theater oh gosh when I was young when you were young yeah wow really oh

Boy what a gorgeous theater uh tough start to the day how’ you deal with that I’m ashamed of how my husband runs that place but I it’s very hard hard for me to stand up to him because he just completely shuts me out and ignores you I’ve been in the restaurant business all

My life uh from day one you can’t indulge from behind the bar with Joe it’s it seems to have become a big problem with him it how bad has it gone um bad his drinking never was to this extent ever you know I saw what my mom went through with an alcoholic father

And the minute she got the strength and the support to get out there she she she she ran a mile have you ever thought about leading Him have you ever thought about leaving him yeah yes I have I’m just like so tired I’m like something’s got to give I just cannot keep doing this I’m having a tough time supporting Joe what am I missing well he he has a good heart he’s

A hard worker and he he is a good man you have to step up and hold the Reigns and he has to allow you to be a partner and I’ll help fix him but he needs to respect you first and listen cuz Joe’s way is not a

Good way anymore I agree thanks M yeah man a couple so far apart running one business Joe’s un borrowed time and he needs to listen listen to her quickly before it’s too late you’re taking great pleasure in that aren’t you Joe you have no idea

Tommy how do we bring in the pride of Valen they used to manufacture cigars in this town and so we’re doing this basically 8ot by 8ot sculpture that’ll be hanging all made of cigar boxes it’s a feature yes sir oh it stands for what the town was exactly you shantia 19 is a

Those are beautiful then an amazing beer batter fish and chips sustainable fish beautiful fries and a great showstopper and then The Shanty Burger we’re going to layer that up and the Goon Burger’s gone that’s been 86 thank God and then finally bacon wrapped pork tenderloin as’s a little bourbon glaze we will

Finish the pork with and that will sing beautifully right okay can do all of this fresh I promise you now we’re going to do it fresh okay you’re very passionate about what you do yeah and I didn’t know about that heart condition okay so you know you’re not

The calist of course yeah I know I’m not that place is tipping you over the edge yes that negativity in front of the customer you have to taper that in okay I do have a temper yeah but I have to harness that yeah and you are the first

Chef I’ve ever met that swears more than me right how’s that possible I don’t know I don’t know I I don’t know that passion don’t change that put that passion on a plate I got you right I want to cook that’s what I came here for

With you okay let’s do the scops first searing them getting a great color on there is crucial right okay when they’re soaking wet you will never get any flavor on there okay so first things first they need to be super dry yeah so you dry them in between the towels I

Will start off with a touch of oil okay we’re lightly seasoning so we go up in so the caramelization is crucial but the Char’s gone gotcha from there a little touch of butter and Spoon that over those scallops delicious into the oven 2 minutes max okay now the garnish

Being that close to him like to Gordon Ramsey he’s amazing he’s like the holy gra is chefs Touch clarifi button there it awesome to talk with a chef that actually knows what the [ __ ] he’s doing doing sit the scallops on okay and mustard cream sauce just going to give

That little bit of heat on top done those are beautiful so you need to commit to change and stop worrying about those customers that are winging about the food that was supporting their alcohol right consumption that’s Joe and his friends the staff basically knows they don’t have to do [ __ ] because by 7:30

He’s going to be drunk as a skunk it’s it’s a problem yeah so here’s the deal you need to be responsible more than ever before gotch you you are in charge of the kitchen and you need to give me time to put Joe in his place

Now with that thing on but it’s up to them to implement them our giant cigar box installation that’s beautiful yeah turned out is there any chance that goes lower we can bring it down a little bit and then we we’ll just raise up the Ivy and these for Acoustics yeah exactly a

Little bit of that and to help break things up lowering that D will make it more intimate and give it more of a Resturant feel yes sir there’s still a massive amount of work to be done before tonight’s relaunch can it be good hey Chef Ramsey what are you feeling you

Know well nervous doing a a relaunch I that I’ve yes I’m good I’ve never had a service yet where I’m not nervous right I know how important this is for you so we’re going to step up it’s not how you start it’s what how you finished there
